Air Fryer Sweet Pepper Nacho Bites

These mini peppers will be perfect for game day snacks or if you are having a get-together with friends and family.
Plus they are gluten-free and low carb so even though on a diet during the holidays will be able to enjoy them too!
Ingredients and Supplies You’ll Need to Make this Air Fryer Sweet Pepper Nacho Bites:
Ingredients:
- Sweet mini bell peppers (AND/OR jalapenos)
- Refried beans
- Taco seasoning (optional)
- Cheese (Monterey jack cheese, Fiesta Blend cheese, cheddar cheese, etc)
- Toppings – avocado, tomato, jalapeno, etc
Supplies
- Knife
- Cutting board
- Paper towel
- Small bowl
- Spoon
- Small bowl
- Air fryer (Cosori Pro II)
Topping to use for mini pepper nachos bites
It would be fun to turn these into a nacho bar-type dish! All you need are some nacho toppings and stuffed peppers, and you are good to go! These are some of my favorite nacho toppings:
- Sour cream
- Cilantro
- Guacamole
- Onion
- Salsa
- Sliced jalapenos
- Corn
- Black beans
- Black olives
- Green onions

If you aren’t a huge fan of refried beans, you can always fill the nachos with lean ground beef or ground turkey with rice, and you will be good to go!
Add a little spice
To turn up the spice for these delicious nacho bites snacks, add in a little chili powder, oregano, paprika, or cumin. Not to mention it is a great way to add even more flavor.
How to make this Air Fryer Sweet Pepper Nacho Bites:
Step 1: Prep the peppers
Begin by washing the peppers and slice the peppers in half lengthwise, removing the seeds as you go. Then, pat the peppers dry with a paper towel.
Step 2: Pepper stuffing
Next, scoop out some of the refried beans into a small mixing bowl and stir in some taco seasoning to taste.
Step 3: Fill peppers
Now, fill the peppers with the spiced refried beans, about 1-2 spoonfuls, although this depends on the size of each pepper, and then place the peppers in the bottom of the air fryer baking tray.
Step 4: Cook the peppers
Air fry for 4 minutes a 380 °F or 193°C, after cooking, add the cheese to the top of the peppers.
Then, air fry for another 4 minutes a 380 °F or 193°C, or more until cheese is melted to taste.
When they are done cooking, top the pepper nachos with your favorite toppings and enjoy!

- 1 tbsp Taco seasoning to taste (optional)
- ½ cup Cheese to taste (Monterey jack cheese, Fiesta Blend cheese, etc)

Instructions

- Place in the air fryer basket.
- Air fry for 4 minutes a 380 °F
- Add cheese
- Air fry for 4 minutes a 380 °F, or more until cheese is melted to taste.
- Top with fave toppings
