Ingredients:

  • Sweet mini bell peppers (AND/OR jalapenos)
  • Refried beans
  • Taco seasoning (optional)
  • Cheese (Monterey jack cheese, Fiesta Blend cheese, cheddar cheese, etc)
  • Toppings – avocado, tomato, jalapeno, etc

  • Cutting board
  • Paper towel
  • Small bowl
  • Spoon
  • Small bowl
  • Air fryer (Cosori Pro II)

It would be fun to turn these into a nacho bar-type dish!  All you need are some nacho toppings and stuffed peppers, and you are good to go! These are some of my favorite nacho toppings:

  • Sour cream
  • Cilantro
  • Guacamole
  • Onion
  • Salsa
  • Sliced jalapenos
  • Corn
  • Black beans
  • Black olives
  • Green onions

If you aren’t a huge fan of refried beans, you can always fill the nachos with lean ground beef or ground turkey with rice, and you will be good to go!

 

Add a little spice

To turn up the spice for these delicious nacho bites snacks, add in a little chili powder, oregano, paprika, or cumin. Not to mention it is a great way to add even more flavor.

How to make this Air Fryer Sweet Pepper Nacho Bites:

Step 1: Prep the peppers

Begin by washing the peppers and slice the peppers in half lengthwise, removing the seeds as you go. Then, pat the peppers dry with a paper towel.

Step 2: Pepper stuffing

Next, scoop out some of the refried beans into a small mixing bowl and stir in some taco seasoning to taste.

Step 3: Fill peppers

Now, fill the peppers with the spiced refried beans, about 1-2 spoonfuls, although this depends on the size of each pepper, and then place the peppers in the bottom of the air fryer baking tray.

Step 4: Cook the peppers

Air fry for 4 minutes a 380 °F or 193°C, after cooking, add the cheese to the top of the peppers.

Then, air fry for another 4 minutes a 380 °F or 193°C, or more until cheese is melted to taste.

When they are done cooking, top the pepper nachos with your favorite toppings and enjoy!
