Healthy Air Fryer Zucchini Corn Fritters

These healthy air fryer zucchini corn fritters are absolutely delicious to say the least. When I first made this recipe I was so surprised at the amazing flavors that worked so well together! You will love this recipe too because it is so simple, yet so flavorful. As an added bonus, you make these in the air fryer, so they are already more healthy than frying them. 

What you need to make simple air fryer zucchini corn fritters

Like I mentioned before, this recipe is incredibly easy. You only need 2 medium zucchinis, 1 cup of corn kernels, 1 medium potato, flour, garlic, olive oil, and salt & pepper.

Since the purpose of the flour is to soak up the moisture from the vegetables, you can easily substitute the flour for a different flour of your choice (such as chickpea flour). You might need to add more flour than called for,  otherwise your fritters will be mushy and fall apart.

Important Tips

The zucchini was very moist after grating it and leaving salt on it for 5+ minutes. I squeezed it between paper towels, and got a lot of moisture out, but man it was impossible to get all of the moisture out. The flour soaks up most of the rest.

If you use minced garlic from a jar, you’ll want to soak up some of the oil by placing the minced garlic on a paper towel first. You don’t want to add more moisture to the fritters.  

When I made these I didn’t have any parchment paper, so I used wax paper to prep and oil my fritters. However, DO NOT PUT WAX PAPER in the air fryer. That can cause a fire, and is not a good idea. 

It is also important to brush oil on the outside of the fritters because this will give them a nice crunch. You can do it without, but the exterior will be dry and not appealing.

Remember, cooking time will depend on your air fryer model. Be sure to watch the fritters as they are cooking. Start with a lower cook time and add more as needed.

These air fryer zucchini corn fritters are healthy, crunchy, and so much better than expected. I love how the different flavors come together to create a surprising and flavorful treat. Enjoy these healthy fritters in any dipping sauce of your choice. My favorite was a homemade mix of ketchup and mayonnaise (also known as fry sauce here in the western US).   • Grate zucchini using a grater or food processor. In a mixing bowl, mix grated zucchini with a little salt and leave it for 10-15 min. Then squeeze out excess water from the zucchini using clean hands or using a cheesecloth.
  • Cook the potato in a microwave for 3 minutes. Then place in cold water for a few minutes. Peel and then grate or mash.
  • Combine zucchini, potato, corn, chickpea flour, garlic, salt, and pepper in a mixing bowl.
  • Roughly take 2 tbsp batter, give it a shape of a patty (about the size of your palm) and place them on parchment or wax paper. Lightly brush oil on the surface of each fritter. Preheat Air Fryer to 360˚F/182˚C.
  • Place the fritters in the preheated Air Fryer and arrange so that they are not touching each other. Cook them for 9 min.
  • Then turn the fritters and cook for another 4-5 min or until well done or till you get the desired color and crunchiness.
  • Serve warm with dipping sauce of your choice.

Recipe Notes

You can use any kind of flour really, as the purpose is to soak up some of the moisture from the ingredients.
If you use minced garlic from a jar, soak up some of the oil by placing the minced garlic on a paper towel first so you don’t add any more moisture.
Do not put wax paper or parchment paper in the air fryer!
