Air Fryer Shrimp Fajitas
Mexican is always a favorite type of meal in our house, so this Air Fryer Shrimp Fajita recipe is always a hit.
These are just like making sheet pan shrimp fajitas instead made in the air fryer! Aka cutting down on the cook time and still with all the great flavor.
You could also turn this into chicken fajitas simply by switching out the protein if you or your family don’t love shrimp.

Ingredients:
- Shrimp thawed, peeled, deveined, tails-off
- Olive oil
- Sweet onion
- Bell peppers (red, orange, and/or yellow)
- Lime (Fresh lime juice)

- Tortillas
- Fresh lime slices
- Sour cream
- Guacamole or avocado
- Cilantro
- Salsa
Homemade Fajita Seasoning
- chili powder
- paprika (smoked paprika can work in a pinch)
- dried oregano
- salt
- sugar
- cumin
- garlic powder
- onion powder
- cayenne pepper
Supplies
- Oil sprayer
- Small bowl
- Air fryer (Cosori Pro II)
Type of tortillas to use
For the fajita shrimp recipe, I really do enjoy using flour tortillas instead of corn tortillas because the warm tortillas hold up better to the juicy vegetable fajita mixture better than corn tortillas. But feel free to choose which you like better.
What is the difference between fajita seasoning and taco seasoning?
Overall, they are fairly similar to the type of seasonings that are mixed together. However, the taco seasoning tends to have more chili powder, making it a spicier flavor than a classic fajita seasoning.

If you want a simple way to add even more protein to this dish, add a little bit of black beans to this recipe.

How to make this Air Fryer Shrimp Fajitas:
Step 1: Make fajita seasoning
First, mix together all of the seasonings in a small bowl to make the homemade fajita seasoning mix.
Step 2: Prepare veggies
Start by cutting the onion and pepper into thin strips.
Then, in a small bowl toss the sliced onions, peppers, and shrimp with the oil, making sure to stir it all together to coat everything in the oil.
Step 3: Seasoning veggies
After it is all coated in oil, add in the fajita seasoning mix and 1/2 of the lime juice. Stir to coat.
Step 4: Cook shrimp fajitas
When everything is seasoned, add as much of the mixture to the air fryer basket.
You may need to cook in batches if the air fryer isn’t big enough.
It’s okay if things overlap in the basket, just don’t overfill the basket past halfway full.
Air fry at 380 degrees F or 193 degrees C for 10 minutes. Make sure to stir everything at the halfway point, and add the rest of the lime juice if desired (at the halfway point).
The shrimp is done when it reaches an internal temperature of 145 degrees F or 63 degrees C.
Then remove from the basket from the air fryer and enjoy with your favorite fajita toppings.

- 1 Sweet onion
- 2 Bell peppers red, orange, and/or yellow

- In a bowl combine the onions, peppers, and shrimp with the oil.
- Stir to coat everything it in oil.
- Add in the fajita seasoning mix and 1/2 of the lime juice. Stir to coat.
- Add as much of the mixture to the air fryer basket. May need to cook in batches if the air fryer isn’t big enough. It’s okay if things over lap. Just don’t overfill the basket past halfway full.
