One Pan Honey Garlic Chicken and Veggies

Try this easy and delicious one-pan dinner!

Enjoy chicken and vegetables any night of the week with this simple recipe! Still delicious and pretty enough to serve for special dinner guests too. Another plus is that the ingredients are on the healthy side. It is a great meal for those joining us in our fitness challenge!

The easy marinade is just olive oil, honey, minced fresh garlic, soy sauce, salt and pepper. Whisk it all together and you’re good to go!

The Zaycon chicken breasts are so large and thick (and wonderful!) that one breast is often about one pound, so I cut it into strips to spread it out and help it to cook more evenly. Worked great! Next time I plan to try it with the chicken cubed into 1-inch pieces and scattered over the top. (P.S. I used a 15-inch jelly roll pan, but any good size baking sheet will do.)

Another thing I want to try next time, because there most definitely will be a next time, is broccoli in place of the green beans. I think it will work to add the broccoli in there with the potatoes in the beginning and roast it all for the same amount of time. While the green beans were great, broccoli is one of my favorite veggie sides!

One Pan Honey Garlic Chicken and Veggies

Yield: 4-6 servings


  • 4 tablespoons olive oil, divided
  • 3 tablespoons raw, local honey
  • 3 cloves garlic
  • 1 tablespoon low sodium soy sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 pound chicken breast
  • 4 medium red potatoes
  • 2 cups green beans


  1. Preheat oven to 400 degrees. Lightly oil a baking sheet, or line with foil.
  2. In a small bowl, whisk together 3 tablespoons olive oil, honey, garlic, soy sauce, salt, and pepper. Combine the olive oil mixture and chicken breasts in a large resealable bag. Shake to coat the chicken well and then let marinate while washing and cubing the potatoes.
  3. Place potatoes in a single layer onto the prepared baking sheet. Drizzle with 1 tablespoon olive oil and season with salt and pepper. Top with the chicken in a single layer and pour the rest of the marinade mixture over the chicken breasts.
  4. Place in the preheated oven and roast until the chicken is completely cooked through (internal temperature of 165 degrees F), about 25-30 minutes. Stir in the green beans during the last 10 minutes of cooking time. Then broil on high for 2-3 minutes, or until chicken is caramelized and veggies are slightly charred.
