Homemade Banana Quinoa Waffles

I think this is a fun variation for the waffle-lovers and you get some of that amazing nutrition that quinoa has to offer. Probably a little more filling than your average waffle too.

Best of all, the whole family loves them, especially the kids! They’re great for breakfast or dinner! (Who doesn’t love breakfast for dinner every once in a while?)

Dry Ingredients for Quinoa Waffles:

There are only four dry ingredients needed for these banana quinoa waffles, so it’s nice and simple!

I use white whole wheat flour in this recipe and it works great! You could also try using all-purpose flour or half all-purpose and half whole wheat.

Wet Ingredients for Quinoa Waffles:

There aren’t many wet ingredients needed for this recipe either, only six altogether.

The unique ingredients in this recipe are the cooked quinoa and mashed bananas. I love the extra nutrition, fiber, and protein from the quinoa! The bananas add some additional nutrition, along with some sweetness and flavor too.

How to Get Perfect Waffles:

Fluffy egg whites

First, beat your egg whites until they form stiff peaks. Then, gently fold the stiff egg whites into the batter. Folding is key as it keeps the batter nice and airy.

This is the key to nice and fluffy waffles!

My waffle maker makes 6-inch Belgian waffles and I get about six waffles out of this recipe.

Final Thoughts

Whenever I make waffles, I love to freeze the extra waffles and save them for a time when I need a quick breakfast, lunch, or dinner. Then just thaw them mostly in the microwave, then pop them in the toaster (or a toaster oven, or traditional oven). They will be warm and crispy just like freshly made ones! I also like to do this with my favorite French Toast recipe.

Top these waffles with syrup, fruit, whipped cream, peanut butter, yogurt, whatever you want! Give this recipe a try next time you have a few ripe bananas to use up! Enjoy!

  • In a small saucepan, bring water to boiling; stir in quinoa. Reduce heat; cover and simmer for 10 to 12 minutes or until tender and liquid is absorbed. Remove from heat. Transfer to a small bowl and chill for 1 - 2 hours.
  • Preheat waffle maker according to manufacturer's directions. In a large bowl whisk together the flour, brown sugar, baking powder, and salt.
  • In a medium bowl combine the cooked and chilled quinoa, banana, egg yolks, butter, and milk. Add to flour mixture and stir until just combined.
  • In a clean medium bowl, beat egg whites with an electric mixer or wire whisk until stiff. Gently fold into batter until incorporated. Add batter to waffle maker and cook according to manufacturer's directions. Serve topped with berries.
