I love this microwave cream cheese French toast in a mug recipe!

This Cream Cheese French Toast in a Mug with berries is the breakfast I want for Mother’s Day! While I really enjoy the more traditional French Toast in a Mug, I love this combination of cream cheese and berries even more. It is almost like a bread pudding with a slight cheesecake flavor and berries on top. And it takes less than 7 minutes to make!

Just like the French Toast in a Mug recipe, it is super easy and fast to get a delicious breakfast or dessert for one with this recipe. Perfect as breakfast in bed for a special someone! This yummy creation is adapted from one of my favorite breakfast bake recipes on the blog – Berry Croissant Bake!

Note that you can use a mug, ramekin, or small microwave-safe bowl. Just make sure that the container you choose can hold at least one cup with a little wiggle room and is microwave-safe. (The mixture puffs up as it cooks.) I have 8-ounce ramekins and a variety of mugs that all work pretty well for this.

Be sure to get good bites down to the bottom of your mug! There is usually some delicious cream cheese goodness hanging out down there.

With soft, white bread, your French toast in a mug will be more soft and mushy. This recipe is best with a more hearty type of bread, or a croissant is amazing. I use my regular wheat sandwich bread or part of a croissant from Costco with delicious success! (Final photos of both are included in this post.)

Ingredients

  • 1 ounce cream cheese
  • 2 teaspoons granulated sugar
  • 1 large egg
  • ¼ teaspoon vanilla
  • 2 tablespoons milk
  • 1 cup cubed bread or croissant about 1 1/2 slices hearty bread cut into 1/2-inch pieces
  • 2 tablespoons raspberries fresh or frozen, chopped

Instructions

  • Place cream cheese and sugar in mug, ramekin, or other microwave-safe small bowl. Use a fork to mash the cream cheese and sugar together until well combined. Add the egg, vanilla, and milk and use the fork to whisk until mixture is combined. It is ok if there are still small lumps of cream cheese.
  • Add cubed bread or croissant pieces and gently fold them into the mixture without breaking them apart, until each piece is no longer dry. Let sit for about 1 minute, to allow bread to soak up the mixture.
  • Microwave for 1 minute. If there is still liquid, microwave for another 10-30 seconds, depending on your microwave, until the mixture is solid. (1 minute and 20 seconds works well for me.) Careful, mug may be hot!
  • Sprinkle chopped berries on top. If desired, sprinkle powdered sugar over top as well. Serve warm.

  • WOW, this was dangerously good. Moist and cakey like it should be. However, maybe I’m just a sweets junkie, but I feel like this needed more sugar. In addition to the 2 tsp, I drizzled about 2 tsp of maple syrup right before going in the microwave, 1 more tsp drizzle after it was cooked, and a few chocolate chips, and I still felt like parts of it were a little under sweet. So if you’re looking for a healthy-ish breakfast, the original recipe is great.
