Healthy Chicken and Vegetables Air Fryer Recipe!
After falling in love with these easy air fryer fajitas, I wanted to find a new way to use chicken, veggies, and seasoning to make another healthy, quick meal. Different seasonings, different veggies, and we’ve got another healthy meal in less than 20 minutes!
Healthy air fryer chicken and veggies is a great lunch or quick dinner. Macro friendly, gluten-free, dairy-free, low carb, egg-free, clean eating, and adaptable for a lot of different diets and needs. 😉
Big bonus – it takes about half the time as it would in the oven!
Which vegetables should I use?
My favorite tip to make air fryer chicken and veggies even faster: Use frozen veggies.
I like using a bag of frozen PictSweet Farm Steam’ables Spring Vegetables in this recipe. It includes yellow squash, zucchini, bell pepper, carrots, and asparagus. Because it already has some salt and pepper in the mix, I added just a little less salt and pepper than written in the recipe. I think I will add some broccoli florets next time too!
If you don’t find a nice frozen mix you like, you can make your own veggie mix with fresh or frozen veggies. Try about 1 cup broccoli florets, some chopped zucchini, 1 cup chopped bell pepper, and half of an onion.
This recipe will work with pretty much any quick-cooking vegetables, so feel free to change it up!
I love the added fresh, bright flavor of fresh lemon juice on these air fryer chicken and veggies, so I recommend serving with lemon wedges. Chopped fresh parsley can be a nice touch too. Enjoy!
Oven Instructions
If you don’t have an air fryer, consider getting one! I love my Cosori 5.8QT air fryer!
To make this recipe in the oven, preheat oven to 450°F and roast chicken and veggies on a sheet pan for 15-20 minutes, or until charred and cooked through.

Healthy Air Fryer Chicken and Veggies

Ingredients
- 1 pound boneless skinless chicken breast cut into bite-size pieces
- 10 to 12 ounces frozen veggie mix
- 1 tablespoon olive or avocado oil
- 2 garlic cloves minced
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon Italian seasoning
- lemon wedges
Instructions
- Preheat air fryer to 400˚F/204˚C.
- Add chicken and veggies to a large bowl and drizzle oil over top. Sprinkle on seasonings. Stir to coat chicken and veggies evenly.
- Transfer mixture to air fryer. Cook at 400˚F/204˚C for 10 minutes, shaking halfway through, or until charred and cooked through. Serve with lemon wedges.
