Check in the frozen section at your grocery store for a bag of plain frozen peppers and onion, about 12 ounces. So, so easy and very affordable at my grocery store. Of course, you can use fresh chopped onion and bell peppers alternatively.

At first, I was worried that the chicken and veggies would end up mushy or soggy since there are frozen ingredients, but nope! The chicken and veggies cook up perfectly in the air fryer together. The chicken can even be slightly frozen and it will still turn out wonderfully.

It is super convenient to just dump a fajita seasoning packet into the mix, but it is also pretty easy to mix up your own fajita seasoning. Do whichever you want! Below is the homemade fajita seasoning recipe that I use from The Recipe Critic. Or, in a pinch, you could use taco seasoning.

Fajita Seasoning Recipe

  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper

Mix it all together. Makes about 2 tablespoons, equivalent to 1 packet.

Equipment

Ingredients

  • 1 pound boneless skinless chicken sliced
  • 1 bag 12 ounces frozen peppers and onion
  • 1 tablespoon oil
  • 1 packet fajita seasoning or homemade seasoning

Homemade Fajita Seasoning

  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper

Instructions

  • Place sliced chicken and frozen veggies in a mixing bowl. Drizzle oil over all and stir to coat. Dump mixture into air fryer basket. Sprinkle fajita seasoning over all, stir to coat evenly.
  • Cook in air fryer at 360ËšF/182ËšC for 8 minutes. Stir contents.
  • Cook for an additional 5-8 minutes at 380ËšF/193ËšC, until chicken is done and reaches 155ËšF/68ËšC internal temperature.
  • Serve warm with tortillas or on a salad with your favorite fajita toppings, like cheese, cilantro, sour cream, avocado, guacamole, etc.

Recipe Notes

Homemade fajita seasoning yields about 2 tablespoons - equivalent to 1 seasoning packet.
