Easy Air Fryer Melting Roasted Potatoes Recipe
I love air fryer roasted potatoes!
Air fryer roasted potatoes are awesome because they taste delicious and they take a lot less time to cook than in the oven. This particular recipe is adapted from the amazing roasted melting potatoes recipe.
It is now simplified and made faster in the air fryer! They are crispy on the outside and melt-in-your-mouth soft on the inside. All without having to boil any potatoes or roast them in the oven on a baking sheet.

You can skip peeling the potatoes if the type of potato you use does not need to be peeled. I’ve made this recipe with russet potatoes (peeled) and petite gold potatoes (no need to peel). I bet it would work well with red potatoes too!
How to Prep Russet Potatoes for Air Fryer Roasted Potatoes
If you use russet potatoes, peel and cube them, then place them in a bowl and cover them in with cold water while you mix up the seasoning. Soaking the potatoes will help keep them from browning and will remove some of that starch, which helps them crisp up better. Drain the water from the potatoes before you add the seasoning.
This seasoning blend is simple, but works well for air fryer roasted potatoes! You can use oil instead of butter, if preferred. Melted butter (or oil), dried thyme, salt, and pepper is all that is needed for the initial seasoning.
Then this recipe takes it up a notch by cooking the air fryer roasted potatoes in chicken broth and garlic. It adds just an extra layer of flavor and melt-in-your-mouth texture. I found that an 8-inch cake pan fit well in my air fryer for this step!

How Long to Cook Potatoes in the Air Fryer
Please note that cooking time may vary slightly depending on the size of your cubed potato and the type of potatoes you use. I cubed gold potatoes to about 1/2- to 1-inch size and cooked them for about 12 minutes, then cooked them again for 8 minutes and it was perfect.
The potatoes are actually good to go and delicious air fryer roasted potatoes after the first session of air frying, but that extra 8 minutes in the broth and garlic is a nice way to change it up and add a little more flavor.

Easy Air Fryer Melting Roasted Potatoes Recipe

Ingredients
- 1 ½ pounds potatoes peeled and cubed
- 2 tablespoons butter melted
- ½ teaspoon dried thyme
- ⅓ teaspoon salt
- ⅛ teaspoon pepper
- ¾ cup chicken broth
- ½ teaspoon minced garlic
Instructions
- Place peeled and cubed potatoes in a large bowl. Toss the potatoes with the melted butter, thyme, salt, and pepper, until evenly coated.
- Cook potatoes in air fryer at 380 °F for 12-15 minutes, tossing halfway through, edges should be browned.
- Transfer the potatoes to an oven-safe shallow dish that will fit in your air fryer. Spread potatoes to be in as much of a single layer as possible. Pour broth into dish and add minced garlic; stir to coat.
- Cook in air fryer at 380 °F for 8 more minutes. Carefully remove dish and let sit for a few minutes. Serve warm, pour any remaining sauce from the pan over the potatoes, and enjoy!
