Ratatouille Gnocchi in the Air Fryer
Summer is in full swing. Take advantage of the fresh summer vegetables and make this healthy vegetarian air fryer dish for dinner tonight! I loved having this air fryer ratatouille gnocchi because it was so easy to make, and the flavors from all of the vegetables came together to burst with real, fresh flavor.
This ratatouille gnocchi recipe is just what you need this summer!
What is in Ratatouille?
Surely, you have heard of the Disney movie Ratatouille. But what is ratatouille actually made of? Ratatouille is a French end-of-summer stew that is packed with fresh flavors from vegetables such as eggplant, zucchini, bell pepper, yellow squash, and tomato.
Our ratatouille won’t be a stew, it will be similar to baking the vegetables on a sheet pan. So, for this air fryer ratatouille, you will need:
- 4 cups mixed vegetables (I used zucchinis, yellow squash, eggplants, tomatoes, bell pepper, red onion, cut into bite sized pieces) – Feel free to use any fresh summer vegetables you want here!
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
- 1 tsp maple syrup (optional)
- 2 tsp herbes de Provence or Italian Seasoning (optional)
Since we are adding gnocchi to our ratatouille, you will also need:
- 1 pound gnocchi (I bought my package from Trader Joe’s)
- 1/2-1 tablespoon of oil (I used avocado oil)
How to Make Ratatouille in the Air Fryer
This recipe is so quick to make in the air fryer! First, you need to cut all your vegetables into bite-sized pieces. Then, in a bowl, mix together the vegetables with the garlic, olive oil, balsamic vinegar, salt, pepper, maple syrup, and herbes de Provence.
Feel free to add more or less of the balsamic vinegar, garlic, salt, and pepper to your taste. You want to make sure that vegetables are completely coated with the oil before cooking.
How to Make Gnocchi in the Air Fryer
Place the vegetables in the air fryer. In the same bowl that you used with the vegetables (or in a separate bowl), mix together the avocado oil and the gnocchi. You just want to make sure that the gnocchi is covered with oil so that it will cook and get crispy.
Place the gnocchi on top of the vegetables. Then cook in the air fryer for 15 minutes at 400°F/200°C.
Important Air Fryer Ratatouille Gnocchi Cooking Tip
Since every air fryer make and model is different, you will want to watch your vegetables and gnocchi closely. Feel free to adjust the temp and time for your air fryer. Everything will be done when the vegetables and gnocchi are tender and ever so slightly crispy.
Stir the contents of the air fryer basket often to ensure even cooking all around.
Carefully remove from the air fryer basket and enjoy!

Air Fryer Ratatouille Gnocchi
Equipment
Ingredients
- 1 pound gnocchi
- 4 cloves garlic minced
- 4 cups mixed vegetables zucchini, eggplants, tomatoes, bell pepper, red onion, all cut into bite sized pieces
- ¼ cup olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
- 1/2-1 tablespoon oil of choice
Optional
- 1 teaspoon maple syrup
- 2 teaspoons Herbes de Provence or Italian Seasoning
Instructions
- In a large bowl, mix together the vegetables with olive oil, garlic, balsamic vinegar, salt, and pepper. Optional: add maple syrup and herbes de Provence.
- In a separate bowl, mix the gnocchi together with 1/2 -1 tablespoon of oil of choice. You just want to make the gnocchi covered in oil, but not too much. Season with salt and pepper.
- Place the vegetables in the air fryer basket then add the gnocchi on top. Cook everything at 400°F/200°C for 15 minutes or until everything reaches desired crispiness. Be sure to stir at the halfway point.
- Remove from the air fryer basket and enjoy!
