Air Fryer Latkes
What are latkes?
You might be wondering what a Latke is. It is a delicious fried potato pancake that is made in the Jewish culture while celebrating Hanukkah. It is a tradition to make latkes as a way to celebrate the miracle of the oil lasting for 8 days.
But, whether you celebrate Hanukkah or not, these air fryer latkes are such a wonderful dish to make that is fairly simple and everyone will love! I mean who doesn’t like fried potatoes?
Ingredients and Supplies Needed to Make Air Fryer Latkes:
Ingredients:
- Russet potatoes
- Yellow onion
- Eggs
- Panko crumbs
- Salt
- Ground black pepper
- Chopped fresh chives (for garnish)
- Sour cream or applesauce (
Supplies:
- Peeler
- Grater
- Clean kitchen towel
- Air fryer (Cosori Pro II is my favorite to use)
- Large mixing bowl
- Nonstick cooking spray or oil
- Silicone spatula

Can You Use Hashbrowns?
This recipe while it does use potatoes that you need to grate, the potatoes could be substituted with raw hashbrowns. I would not suggest using frozen hashbrowns as they will need to be combined with the grated onion.
What to Serve with Air Fryer Latkes
Generally, latkes are served with sour cream or applesauce to dip them in. However, you can go for whatever you think would work well! You could even add some hot sauce to the sour cream to spice things up a bit.
Does the Type of Onion Matter for Latkes?
When making the latkes, they are generally made with a yellow onion. Since this is a savory dish, I would not suggest using a sweet onion as the flavors might not mesh well. But if you have a red onion on hand, that should work okay.
Why Do I Need to Grate the Onion?
For the most part, grating the onion has to do with the consistency of the onion. Since they will mesh together with the potatoes in the fitter batter, it is ideal to have them around the same consistency so they cook well and you will not get thick or chunky pieces of raw onion.
How to Make Air Fryer Latkes:
Step 1: Prepare the Potatoes and Onion
Start by washing and peeling the potatoes.
Then use a grater on the large hole setting and grate the potatoes and half a medium-sized onion.
You will get about 3 cups of potato and ¼ cup of grated onion.
Now combine the potatoes and onion together in a large, clean kitchen towel and squeeze the towel as much as possible to get any of the excess moisture out.
Step 2: Preheat the Air Fryer
After you have prepared the onion and potato mixture, preheat the air fryer to 400F or 200C for 5 minutes.
Step 3: Create the Fritter Mixture
Once the moisture has been removed from the onions and potatoes, place them into a large mixing bowl.
Now, add in the eggs, panko crumbs, salt, and pepper to the potato mixture and stir it all together until it is well combined.
Step 4: Begin Forming the Latke Patties
After the air fryer is done preheating, open it up and spray it with oil or nonstick cooking spray.
Then take about ⅛ cup of the potato mixture and flatten it into a patty shape and place it into the air fryer basket, or place the potato mixture directly into the air fryer and then flatten it.
Do this until you have about 3-5 patties in the air fryer. Make sure to not stake the latkes in the air fryer as then they will cook together.
Step 5: Begin Cooking the Latkes
When the latkes have been placed in the air fryer, spray the tops of the latkes with oil and then place the basket into the air fryer.
Turn the air fryer on to 400F or 200C for 8 minutes.
After 8 minutes, use a silicone spatula to flip the latkes, and continue to cook them for another 5 minutes, or until they are golden brown and crispy.
Step 6: Remove the Latkes
Once the latkes have reached your desired doneness, remove them from the air fryer and serve them warm topped with freshly chopped chives, and sour cream or applesauce for dipping.
Step 7: Repeat Steps 4-6
Depending on how many of the latke patties you can fit in your air fryer, you might have to work in batches. In this case, just simply repeat steps 4 through 6 again until you have used up your potato mixture.

Air Fryer Latkes
Equipment
- Peeler
- Grater
- Clean kitchen towel
- Large mixing bowl
- Nonstick cooking spray or oil sprayer
- Silicone spatula
Ingredients
- 3-4 Russet potatoes Peeled and grated
- 1 Yellow onion Small, or half a medium-sized onion
- 2 large Eggs
- ¼ cup Panko crumbs
- 1 tsp Salt
- Freshly ground pepper, to taste
- Freshly chopped chives, to taste for garlish
- Sour cream or applesauce, for dipping
Instructions
- Peel the potatoes
- Grate the potatoes and onion on the large holes of a box grater. I ended up with 3 cups of shredded potatoes and about 1/4 cup of shredded onion.
- Combine the potatoes and onions together. Then transfer it to a kitchen towel and squeeze out the moisture as much as possible.
- Preheat the Air Fryer to 400 °F.
- Place the potato mixture in a large bowl.
- Add the eggs, panko crumbs, salt, and pepper to the potato mixture; stir until well combined.
- Spray the air fryer basket with cooking spray.
- Scoop out about 1/8 cup of the potato mixture into your hand, flatten it into a patty then place in the air fryer basket. Optionally, you can place the 1/8 cup of mixture into the air fryer basket and flatten it in the basket. Keep the latkes in a single layer in the air fryer basket. I was able to do 4-5 in my 5.8qt basket.
- Spray the tops with cooking spray.
- Cook in the air fryer for 8 minutes at 400 °F. Flip the latkes with a silicone spatula and cook for an additional 5 minutes, or until golden brown and crisp.
- Remove and enjoy. Garnish with fresh chopped chives and serve with sour cream, apple sauce, or as is.
