Plus, I can almost guarantee that I will always have the ingredients necessary for this simple dessert recipe in my house, at all times. And it is even a low carb recipe so it’s got that going to for it too!

Ingredients and Supplies You’ll Need to Make Dessert Foldover:

Ingredients:

  • Tortillas, medium or large
  • Cookie butter or spectulos
  • Nutella
  • Mini marshmallows
  • Butter
  • Cinnamon sugar mix

Supplies

  • Pizza cutter or sharp knife
  • Spatula
  • Parchment paper (optional)
  • Air fryer (Cosori Pro II)

What other spreads could I use?

If you are not a fan of either cookie butter or Nutella or if you want to switch it up, here are a few more options to try!

  • Marshmallow creme (could use this in place of the marshmallows)
  • Peanut butter
  • Jelly
  • Hot fudge
  • Sun nut butter
  • Any pie filling could work but will be thicker

Either way, have fun with it! Mix up the flavor and find your favorite combination!

What does the butter do?

By applying the butter to the outside of the tortilla, not only does it help the cinnamon sugar coating stick on the outside, it also helps crisp up the tortilla during the cooking process.

If you want to try another option, try spraying the outside with an oil spray instead just before air frying the foldover dessert.

How to make Dessert Foldover:

Step 1: Prepping the tortilla (pay close attention!)

Begin by laying the tortilla flat, then fold it in half, open it back up, then fold it in half in the opposite direction, and open it up again. The fold marks create a center point and 4 equal quadrants. Cut along one line going from the center of the tortilla to the right edge.

Step 2: Create the sides

two tortillas with nutella and marshmallows on one half and cookie butter on other half

On the left side of the cut, spread the Nutella to taste. Then, on the right side, spread the cookie butter to your liking.

Now, add the mini marshmallows to the side with the Nutella.

Step 3: Fold it over

Take the Nutella side and fold its first quadrant on top of the other quadrant of the Nutella. Then fold the Nutella side over the cookie butter quadrant. Fold it one more time over the cookie butter. You should end up with a quarter-sized tortilla, with cookie butter on the first inside layer and Nutella and marshallows in the middle layer.

Step 4: Prepare the outside

Butter both sides of the tortilla foldover. Sprinkle cinnamon sugar on both sides. Place in the air fryer basket (I placed mine on parchment paper to make clean up easier, this is optional).

Step 5: Cook the tortilla dessert

Air fry at 380 degrees F or 193 degrees C for 4-5 minutes, flipping at the halfway point, or until the outside is golden and crunchy to your liking.

Remove and enjoy warm!

Comments & Reviews

  • Looks entirely yummy, but in what universe is this low carb???? If you’re trying to lose weight, around 20g of carbs a day should be your limit. This desert is 85 grams of carbohydrate – 4 DAYS’ WORTH OF CARBS! Please don’t get my hopes up by throwing the ‘low carb’ phrase into a recipe description – the letdown is almost more than I can bear!
