Air Fryer Chicken Bites and Veggies
Dinner can be super tasty when you make this Air Fryer Chicken Bites and Veggies! The seasoning is super simple to make up, but the flavor of the tender roasted chicken is anything but simple.
Then simply toss some veggies in salt and pepper and bake it all together and you have a filling meal, prepared in less than 10 minutes making it a great dinner for a busy weeknight.

Ingredients:
Chicken
- Chicken breasts, skinless and boneless
- Olive oil
- Salt
- Italian seasoning
- Paprika
- Garlic powder
- Onion powder
- Fresh ground pepper
- Cayenne pepper
- Unsalted butter, diced
Veggies
- Asparagus
- Grape tomatoes
- Olive oil
- Lemon juice (optional for flavor)
- Garlic cloves, minced
- Salt
- Black pepper
- Italian seasoning
Supplies
- Tenderizer
- Paper towel
- Spatula
- Oil sprayer
- Small bowl
- Air fryer (Cosori Pro II)

For this sheet pan chicken recipe (dinners you could make on a baking sheet in an oven), you can use any type of veggies you like. We paired it with asparagus and grape tomatoes, but feel free to mix it up.
- Red bell peppers
- Carrots
- Chopped sweet potatoes
- Zucchini
- Brussels
Does this recipe work frozen?
If you are looking for an easy way to make this into a freezer meal, this is a super meal to do that with.
All you need to do is chop the chicken, place the seasonings in the bag with a little bit of olive oil, and store it in the freezer for later.
Then just pull it out when you are ready to eat it, no need to let it thaw ahead of time either.
Easy clean-up!
To make this recipe even simpler with an easy way to clean up, line the bottom of the air fryer basket with parchment paper, and not only will your chicken not stick, but the pieces will stay out of the bottom of the air fryer.
Cooking tips:
If the chicken and asparagus don’t all fit in your air fryer basket, then cook in batches. Cover one of the cooked ingredients with foil to keep warm while the other cooks.
If the chicken or asparagus/tomatoes are done before the other one, then remove them from the air fryer basket and continue cooking until everything is done to your liking.
How to make this Air Fryer Chicken Bites and Veggies:
Step 1: Prep the chicken
First, start by patting your chicken dry with paper towels and then pound it down to an even thickness with a tenderizer.
Once that is done cut the chicken into into strips, and then bite-sized pieces.
Step 2: Make the seasoning
Then in a small bowl, mix together the seasoning ingredients for the chicken.
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon fresh ground pepper
- 1/8 teaspoon cayenne pepper
Step 3: Prep the veggies
Wash and prep your asparagus and tomatoes.
Step 4: Season the chicken
Then, in a bowl, mix together the chicken cubes, oil, and seasoning mixture.
Once the chicken is seasoned, place the chicken on one side of the air fryer basket.
Cube the butter into little chunks and place it on top of the chicken.
Step 5: Add in the veggies
Now, place the asparagus on the other half of the air fryer basket, then spray the asparagus with a bit of oil. Then carefully season with salt, pepper, Italian seasoning, and minced garlic to your taste.
Optional: add the tomatoes on top of the asparagus. OR add the tomatoes during the last 4-5 minutes of cooking. OR add the tomatoes after cooking. Depends on if you like roasted tomatoes or not.
Step 6: Bake it all
Air fry at 380 degrees F or 193 degrees C for 10 minutes, stirring at the halfway point.

ROASTED CHICKEN BITES & VEGGIES
- 1 pound Chicken breasts skinless and boneless
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Italian seasoning
- ½ teaspoon Paprika
- ½ teaspoon Garlic powder
- ½ teaspoon Onion powder
- ¼ teaspoon Fresh ground pepper
- ⅛ teaspoon Cayenne pepper
- 2 tablespoons Unsalted butter diced
VEGGIES
- Asparagus - to taste
- Grape tomatoes - to taste
- 1 tablespoon Olive oil
- 1 tsp Garlic cloves minced
- ½ teaspoon Salt and pepper
- 1 teaspoon Italian seasoning
Instructions
- Pound down the chicken. Cut into bite size chunks.
- Mix together the seasoning ingredients for the Chicken. (salt, Italian seasoning, paprika, garlic powder, onion powder, fresh ground pepper, cayenne pepper)
- Wash and prep your asparagus and tomatoes.
