Easy & Cheesy Tater Tot Breakfast Bake with Sausage and Bacon

This is like an ultimate breakfast casserole – there’s sausage, bacon, eggs, cheese, and hash browns (tater tots are basically hash browns).

If you served it over pancakes or waffles, you would have nearly every delicious breakfast element. 😉 I shouldn’t even give you ideas like that though – this breakfast bake is filling enough as it is!

Preparation Tips

Preparing this tater tot breakfast bake is super easy:

  1. Brown the breakfast sausage in a skillet
  2. Drain it
  3. Layer it on the bottom of your 9×13 baking dish
  4. layer on a bunch of cheesy goodness and
  5. Whisk up a seasoned egg and milk mixture to pour on top

Assembling the Casserole

Place the frozen tots in a single layer over the top of the casserole. It’s now ready to hang out in the fridge or go into the oven at this point. That’s right, you can make this breakfast bake up to a day in advance if you want to! Love that.

As if this tater tot casserole isn’t already delicious enough, top it off with cooked bacon pieces for the last 5 or 10 minutes of baking. I usually just cook the bacon in the microwave, which you can do pretty easily like so:

  1. Layer paper towels on a large plate
  2. Layout bacon in a single layer
  3. Cover with a paper towel
  4. Microwave for about 5 minutes.

To add some color and fresh flavor to your breakfast casserole, throw on some chopped green onion or fresh parsley before serving.

I love make ahead breakfasts, and this Tater Tot Breakfast Bake Recipe is easy, fast, and can be frozen or simply made a day or two ahead! It is also great without any make ahead time. Potatoes, sausage, bacon, and eggs! You can't get any more hearty than that!

  • In a large skillet, brown the sausage on medium high heat, breaking up the meat as it cooks. Drain and layer into a 9x13 baking dish. Sprinkle 2 cups of the cheese evenly over sausage.
  • In a large bowl, whisk together the milk, eggs, pepper, onion powder, and salt until combined. Pour evenly over the cheese and sausage in baking dish. Layer frozen tater tots over the top.
  • If not baking right away, cover tightly with foil and refrigerate for a few hours or overnight. When ready to bake, preheat oven to 350°F/175°C. Bake, uncovered for about 35 minutes. Then top with additional ½ cup cheese, crumbled bacon, and bake another 5-10 minutes, or until bubbling and golden brown.
  • Garnish with green onion, let rest at room temp 10 minutes, then serve.
