easy skillet honey lemon glazed chicken

Healthy and Easy Honey Lemon Glazed Chicken!

This lemon glaze chicken is definitely one of my go-to recipes lately. I can have it ready in 30 minutes or less, plus it is healthy and super delicious.

One of my favorite things about this recipe is that honey is the only sweetener in it! This makes it much healthier than some other recipes and the honey flavor works great alongside the lemon.

Making the Lemon Glaze for the Chicken

The lemon glaze sauce is simple and fast to throw together. I usually have everything on hand too – just have to check for the 2 lemons and some ginger before I get started.

I often like to use a stir-in ginger paste as a shortcut, but you can also cut a fresh piece of unpeeled ginger into 1-inch pieces and freeze it. Then just pull some straight out of the freezer and grate it up for a recipe like this one.

If you’re looking for a low-fat alternative for chicken broth, check out our homemade chicken broth recipe. It’s freezable too so you can save it and have it on hand for future recipes.

Seasoning Tip

Patting the chicken pieces dry with a paper towel first helps the salt and pepper to adhere to the chicken better, which means a more flavorful and delicious meal! I usually just dry and season the upward side and call it good. 😉

Browning the Chicken

Be sure that the oil and skillet are nice and hot before you add the chicken so you can get some nice browning action. By the way, I love my T-fal 12-inch skillet!

Serving Tips

When the sauce and chicken are cooking together and you’re waiting for it to cook through and thicken, it’s a great time to finish up your rice or other side dishes. You can also serve this yummy lemon-glazed chicken over quinoa, cauliflower rice, or whatever else you desire. Steamed broccoli or honey glazed carrots are great side dish options too.

Also, if you want to add some additional flavor to your lemon glazed chicken, add some additional salt and pepper after it’s cooked. You can also add some parsley or cilantro if you’d like.

my rice colander

I love this Rice Wash Bowl! The holes are small enough that I don’t lose grains of rice down the sink. Use it every time I make rice!

Instructions

  • For the lemon glaze, whisk together the chicken broth, lemon zest, lemon juice, soy sauce, honey, ginger, and cornstarch. Set aside.
  • Pat the chicken pieces dry with a paper towel and season over all with salt and pepper.
  • Heat the oil in a 12-inch nonstick skillet over medium-high heat, until rippling and very hot. Add the chicken to the hot skillet, in a single layer, and just brown on all sides. The chicken does not need to be cooked through in this step.
  • Whisk the lemon glaze mixture to recombine, then pour into the skillet with the chicken. Bring the mixture to a simmer and cook for 7-10 minutes until the sauce is thickened and the chicken is cooked through. (It will thicken slightly more as it cools too.)
  • Season with additional salt and pepper to taste, if needed. Sprinkle with parsley or cilantro, if using. Serve with cooked rice or quinoa.
