Easy Granola Parfait Recipe

I think this yummy granola yogurt parfait would be a perfect morning snack! It’s healthy, light, and will definitely give you a good boost of energy.

Since there is a bit of sweetness to it, I think it might actually fulfill that craving for sweets that I get at night too. Trade in the ice cream for a fresh, light yogurt parfait! Yum!

Granola Parfait Ingredients

The granola part of this parfait recipe is really simple and easy. I have oats, almonds, sunflower seeds, wheat germ, flaxseed, and unsweetened flaked coconut in there.

If you want to, you could easily sub something else for the sunflower seeds too. I think the wheat germ and flaxseed are flexible as well.

You can find all the ingredients you need at your local Albertsons! I like shopping at Albertsons because the prices are good, the stores are nice, and the selection is great too.

Holding the Granola Together

The syrup for the granola is melted virgin coconut oil and honey. Nice and simple. No refined sugar needed.

The granola ends up with just a touch of sweetness to it from the honey.

Granola Yield

With this granola recipe, you end up with about 12 cups worth. Of course, you could just do half the recipe, but think of how many more delicious yogurt parfaits you could make with all of it!

You could make other snacks or treats with the granola as well. Oh, I bet it would delicious over cooked apples, like an apple crisp! Mmm.

Parfait Ingredients

Choose any flavor yogurt and whichever fruits your heart may desire! So many possibilities! Of course, some combos are better than others, but I’ll leave it to you to use your best judgment.

I’m pretty much a vanilla girl myself. The Yoplait® vanilla yogurt and fresh strawberries is a yummy choice for this granola parfait. Sliced banana would probably be pretty good in there too.

  • yogurt
  • fruit

Instructions

Granola

  • Preheat oven to 325°F/160°F. In a large bowl, stir together the oats, almonds, coconut, sunflower seeds, flaxseed, and wheat germ.
  • Melt the virgin coconut oil and mix in the honey. Pour over the oat mixture and stir to coat.
  • Line a baking sheet with a silicone baking mat or spray with nonstick cooking spray. Then pour the mixture onto the prepared pan and spread into an even layer.
  • Bake for about 15 minutes, then stir it and bake for another 15 minutes, or until golden brown.
  • Let the granola cool. Store in an airtight container. Makes about 12 cups.

Parfait

  • To assemble, layer yogurt, then granola, then fruit, and repeat.
