Super Easy Fudge Stripe Cookie Salad

Here’s a fun and easy fruit & cookie salad recipe for you to try out! This is one of those fruit salads that you can get away with serving as a side dish, or you can serve it as a dessert. Best of all, it only takes a few minutes to throw together! You don’t even have to chop up any fruit!

Cookie Salad Ingredients

Like most fruit salads, you can change things up for different flavors and preferences. I used vanilla instant pudding mix, buttermilk, whipped topping, mandarin oranges, pineapple tidbits, and frozen raspberries in addition to the fudge stripe cookies.

Normally raspberries are too soft to be in a fruit salad, but if they are kept frozen it works out pretty well. However, you could use chopped strawberries instead if you prefer. The fruit tastes great with the hint of chocolate from the cookies!

Final Thoughts

This is a flavorful, fruity side dish (or dessert) with a pleasant chocolate shortbread fudge stripe cookie surprise throughout! It’s also so easy to make! It’s the perfect quick dessert for a hot summer day.

Note: This cookie salad is best served chilled and within an hour or two of making. Enjoy!

Ingredients

  • 2 packages vanilla instant pudding mix 3.4 ounces/96 grams each
  • 2 cups buttermilk
  • 2 cans mandarin oranges in juice undrained (21 ounces/595 grams)
  • 2 cans pineapple tidbits in juice undrained (20 ounces/567 grams)
  • 2 cups whipped topping 8 ounces
  • 12 ounces frozen raspberries do not thaw
  • 1 package Keebler fudge stripe cookies broken into bite-size pieces (11.5 ounces/326 grams)

Instructions

  • In a large bowl, whisk together the pudding mix and the buttermilk.
  • Gently fold in the mandarin oranges and juice, pineapple tidbits and juice, whipped topping, raspberries, and cookie pieces until combined.
  • Chill for 5-10 min and serve.
