30-Minute Air Fryer Shrimp Scampi (No Wine Needed)

There are so many different ways you can cook raw shrimp. My personal favorite way to cook shrimp is in the air fryer for this shrimp scampi recipe! Shrimp scampi is a light and fresh meal that you can make in the air fryer in 30 minutes!

Can you cook scampi in the air fryer?
Shrimp scampi is a tasty, balanced meal with pasta, freshly roasted vegetables, and perfectly cooked shrimp. Because you normally roast the shrimp in the convection oven or fry the shrimp on the stovetop, you can certainly make this recipe in the air fryer!
I love this recipe in the air fryer because you can cook the shrimp and vegetables at the same time!
Ingredients and supplies needed to make shrimp scampi without wine:
Ingredients:
- Fresh asparagus
- Cherry tomatoes or 2 Roma tomatoes (about ½ pound of large chunked)
- Medium raw shrimp, shelled, deveined, and tails off (frozen shrimp works)
- Linguine pasta
- Olive oil
- Garlic cloves
- Salt
- Black pepper
- Lemon juice
- Paprika
- Onion powder
- Dried basil
- Red pepper flakes
- Butter
- Freshly grated parmesan cheese, optional
Supplies:
- Large pan
- Colander
- Cutting board
- Sharp knife
- Large mixing bowl
- Air Fryer
Can I use chicken instead of shrimp?
If you aren’t a fan of shrimp, you can switch out the shrimp with about 1- 1 1/2 pounds of chicken chunks. Chicken normally takes 10-13 minutes to cook in the air fryer at 380 degrees Celsius or 92 degrees Fahrenheit. So just make sure the chicken is cut into bite sized pieces for faster cooking. And make sure it reaches the safe internal temperature of 165 degrees Celsius or 75 degrees Celsius on an instant read food thermometer for completed cooking.
How do I make shrimp scampi without wine?
It is a long list of ingredients to make perfect and classic shrimp scampi with no wine. However, I love this recipe because the ingredients I used to make this shrimp scampi recipe are pantry staples.
How to cook Shrimp Scampi in the air fryer:
Step 1: Cook the Linguine
This recipe comes together pretty quickly. Make the linguine first according to the package directions that you are using.
Step 2: Prepare the Vegetables
The best part of this recipe is that you can switch out the asparagus and tomatoes with your own favorite vegetables. Whatever vegetables you use, be sure to combine them with 1/2 tbsp olive oil, 1/2 of a garlic clove (minced), salt, and pepper.
The oil will help the vegetables roast in the air fryer.
Step 3: Prepare the Shrimp
My personal favorite part of this recipe is the flavor of the shrimp. I don’t have a lot of shrimp lovers in my family, but they love this shrimp scampi recipe. It’s because this recipe beautifully light, fresh, and lemony.
Combine the shrimp with the remaining ingredients, besides the butter, in a small bowl.
Step 4: Air fry
I also love this recipe because I can cook the shrimp and the vegetables at the same time in the air fryer basket! I have a Cosori 5.8 quart air fryer and a Cosori Dual Blaze air fryer. The air fryer basket of both of these air fryers are large enough to cook the ingredients at the same time. If your air fryer is not large enough to hold all these ingredients, you can cook half of vegetables and shrimp together in one batch. Or, cook the shrimp together. Then, cook the vegetables together.
You will want everything on a relatively evenly spaced layer. But, it is okay if there is overlapping with the foods.
Cook the foods in the air fryer for 8 minutes at 380 degrees Fahrenheit or 193 degrees Celsius. Then, add 2 tablespoons worth of butter to the air fryer basket, on top of the shrimp, asparagus, and tomatoes. I cut the butter into cubes and layer it on top.
Air fry for an additional 2 minutes until everything is roasted to your perfection.
What is the internal temperature of shrimp?
Shrimp is fully cooked once it reaches the internal temperature of 145 degrees F or 63 degrees C.
The asparagus is fully cooked once it is tender to your liking. For the tomatoes, they should be leaking some juices.
Step 5: Use the juices from the air fryer
If done correctly, there should be some juices at the bottom of the air fryer basket, underneath the pan or the basket (depending on what kind of air fryer you have). Remove the pan and the contents of the air fryer basket into a bowl. Add in the linguine. Then, add in all the juices from the bottom of the basket into the bowl. This adds a great flavor to the pasta.
If it is juicy enough for you, add additional water and lemon juice and stir until everything is evenly coated.
Step 6: Serve and enjoy
Serve the pasta with additional lemon juice and by sprinkling freshly grated parmesan cheese for a bursting of flavor heaven. You will love this recipe for its simplicity, its goodness, and its tasty flavors.
Final Thoughts
Enjoy air fried shrimp scampi for lunch or dinner. This is a perfect meal to serve if you are looking for a light and fresh meal that is incredibly filling and even healthy! I love this recipe because it is a nice change of pace from the other foods I traditionally make.

Air Fryer Shrimp Scampi (Without Wine)
Equipment
- Large pan
- Colander
- Cutting board
- Sharp knife
- Large mixing bowl
Ingredients
Vegetables
- ½ pound asparagus
- ½ pint cherry tomatoes or 2 roma tomatoes - about 1/2 pound of large tomato chunks
- ½ tablespoon olive oil
- ½ garlic clove minced
- salt and pepper to taste
Shrimp
- ½ pound medium raw shrimp shelled, deveined, and tails off
- ½ tablespoon olive oil
- ½ tablespoon lemon juice
- 2 garlic cloves minced
- 1/8-1/4 teaspoon paprika
- 1/8-1/4 teaspoon onion powder
- 1/8-1/4 teaspoon dried basil
- red pepper flakes to taste
- pepper to taste
- 2 tablespoons butter
Serve with (optional)
- ½ pound linguine
- lemon juice to taste
- parmesan cheese fresh and grated
Instructions
- Make linguine according to package directions.
Prepare the ingredients
- Wash and trim asparagus. Cut in half or thirds, depending on preference.
- Wash tomatoes. If using Roma tomatoes, cut into bite size pieces.
- If shrimp is frozen, thaw.
Vegetables
- Combine the asparagus and tomatoes in a bowl with olive oil, garlic, salt and pepper. Stir until everything is evenly coated.
Shrimp
- Combine shrimp in a bowl with the oil, lemon juice, garlic, paprika, onion, basil, red pepper flakes, and pepper.
Air Fry
- Place the shrimp on one side of the air fryer basket. Place tomatoes and asparagus in the other side of the basket.
- Air fry for 8 minutes at 380 °F.
- Add about 2 tablespoons total of cubed butter to the top of the shrimp, asparagus, and tomatoes. Air fry for an additional 2 minutes.
Serve and Enjoy
- Remove contents from the air fryer basket and combine with the cooked linguine in a bowl or plate. Take all the juices from the bottom of the air fryer basket and add to the pasta and shrimp. If you need additional liquid, add a little water.
- Top with additional lemon juice and parmesan cheese, to taste and if desired.
