Low Carb Keto Meatloaf with Bacon

This bacon wrapped meatloaf recipe is gluten free, low carb, keto, and delicious! Seriously, it tastes delicious whether you are eating gluten-free or low-carb or not. I have made this keto meatloaf with bacon several times now and everyone eats it up. I love finding low carb recipes that the whole family can enjoy!

Ingredients

No breadcrumbs in this keto bacon wrapped meatloaf recipe! Almond flour gets the job done though – low carb style. With the popularity of keto recipes, almond flour is easy to find now. My local grocery stores, online stores, and Costco carry it. Heck, even Amazon has it.

All of the other ingredients in this recipe are pretty common and easy to come by too. They help keep the meatloaf together and add some flavor too! Of course, the bacon and tangy meatloaf sauce add tons of flavor as well!

Wrapping Your Keto Meatloaf

Wrapping bacon around meat is a fantastic idea because BACON. Love that stuff. Whether you need 5 or 6 slices will depend on the size and shape of your meatloaf, but I’m sure you’ll figure out what to do if you end up with an extra slice of bacon hanging around. 😉

Baking time may also vary with the size and shape of the loaf. By the way, the bacon and ground beef from Zaycon Fresh is excellent! I get a lot of my meats from them.

Making the Sauce

The tangy sauce is simply ketchup and store-bought Italian salad dressing of your choice. Use reduced sugar ketchup to keep the carbs low, but it works well with regular ketchup too. I’ve used a few different types of Italian dressing and they all seem to taste great with this meatloaf recipe, so just use whatever kind you like.

Ingredients

Instructions

  • Preheat oven to 375°F/190°F. Line a 9x13 baking dish with foil for easy cleanup.
  • In a large bowl, use your hands to mix together the ground beef, green pepper, onion, garlic, almond flour, mozzarella, Parmesan, eggs, Worcestershire, salt, and pepper. Mix until just evenly combined - don't over-mix! Shape into a loaf.
  • Place raw bacon slices in pan so that one end of each slice will be halfway under the meatloaf. Place meatloaf into the pan, onto that end of the bacon slices. Bring other end of slices over the top of meatloaf and tuck underneath.
  • Whisk together the ketchup and Italian dressing. Spoon or brush the mixture over the bacon and spread to coat.
  • Bake for 30 minutes. Then increase oven temperature to 425 degrees F and continue baking for another 20 minutes, or until internal temperature of meatloaf reaches 160 degrees. Let sit for 10 minutes before slicing and serving.

Air Fryer Instructions:

  • Make half the recipe, OR plan on cooking this in two pieces, depending on the size of your air fryer.
  • Place air fryer parchment paper on the bottom of basket.
  • Place bacon on top of parchment paper, then place your loaf over bacon and wrap bacon around meatloaf.
  • Air Fry for 20-30 minutes at 360˚F/180°C or until internal temp reads 160˚F/71/1°C
  • Let meat rest and cool slightly, then serve and enjoy!
