Foil Packet Grilled Nachos!

I love how easy and yummy these grilled taco nachos are! I really think it is extra fun to cook them on the grill. It would work just as well to cook these taco nachos over a campfire and would probably be even more fun!

I do not consider myself to be much of a nacho fan, but these nachos have great flavor while still keeping it simple. I love the addition of fresh tomatoes and green onions too. Maybe I do like nachos after all, because I certainly enjoyed these grilled taco nachos!

I like to use a Mexican blend shredded cheese for extra flavor. Instead of pork sausage this time, I used up some turkey sausage that I had stashed away in my freezer. My husband didn’t even seem to notice (and he is a major nacho fan), so it worked out great!

Spray the sheet of foil and start layering on the nacho goodness. Seasoned sausage, cheese, fresh tomatoes and green onions. These are some good nachos! Can you imagine whipping up these taco nachos while you are camping? You would be very popular, I’m sure. I would just prepare the sausage mixture in advance and pack it along with the cheese, tomatoes, and onions in a cooler.

Fold and seal that foil into a handy dandy foil packet. Then just let it cook until the cheese is melted. How fun is it to cook nachos on a grill?! So fun! In fact, I insisted on using the grill even though it was pouring rain at the time. Totally worth it. I can’t wait to cook these nachos over a campfire someday soon.

Serve these nachos with sour cream and salsa, if desired.

Grilled Taco Nachos Recipe

These grilled taco nachos are so delicious! Easy to cook on the grill or campfire!

  • 5 cups tortilla chips
  • 1 pound bulk pork sausage cooked and drained
  • 4.5 ounce can chopped green chiles drained
  • 2 teaspoons taco seasoning
  • 2 roma tomatoes chopped
  • 2 green onions sliced
  • 2 cups finely shredded cheese Mexican blend or Colby-Monterey Jack


  • Heat coals or gas grill for direct heat. Spray a 30x18-inch piece of heavy duty foil with cooking spray. Spread tortilla chips on center of foil.
  • Mix sausage, chilies, and seasoning mix together in a medium bowl. Spoon the sausage mixture over the chips. Top with tomatoes and onions. Sprinkle evenly with cheese.
  • Wrap foil securely around the tortilla chips and toppings. Cover and grill foil packet, seam side up, 4-6 inches from medium heat for 8-10 minutes, until cheese is melted.
  • Serve with sour cream and salsa, if desired.

To double this recipe, just use this same recipe, but in an additional foil packet.
