Chipotle Rice Copycat Recipe
This sweet lime Chipotle rice copycat recipe is one of my favorite ways to prepare rice. That’s partly because I love the sweet lime rice at Chipotle and partly because I’m a total fan of making my favorite things at home!
This recipe is easy to make and is delicious paired with so many main dishes! Makes a wonderful side dish for fish, chicken, beef or pork. I love it with black beans too.
You can also use it to make your own Chipotle burrito bowl with rice, beans, meat, cheese, tomatoes, lettuce, cilantro, lime and more! The options are endless with this recipe!
Ingredients
This recipe comes from one of our Freezer Meal Groups from way back so I have always just used long grain rice. I have seen many recipes use Basmati rice for this same recipe. I think it turns out great using the long grain rice, but I think I might try Basmati rice next time and see what kind of difference it makes.
If you don’t want to use a can of chicken broth for this recipe, or you use chicken broth a lot and want a cheaper alternative, try our homemade chicken broth. It’s really easy to make and also fat-free!

Sweet Lime Chipotle Rice Copycat Recipe
Ingredients
- 1 Cup Rice uncooked
- 1 teaspoon Butter
- 2 Cloves Garlic minced (optional)
- 1 teaspoon Lime Zest
- 1 can Chicken Broth
- 1-1/4 Cups Water
- 2 tablespoon Lime Juice
- 2 teaspoon Sugar
- 3 tablespoon Fresh Cilantro chopped
Instructions
- Combine rice, butter, garlic, lime zest, chicken broth and water in a sauce pan. Bring to a boil, cover and simmer on low for 20 minutes or until tender. .Remove the lid, fluff the rice with a fork. Mix lime juice, sugar and cilantro and add to the rice and serve.
