A few weeks ago I called to talk with my mom and she told me all about the dinner that she was making. She said she was making a Chipotle Bowl. I have been to Chipotle for burritos, but I have never tried their bowl. My mom told me how she made the black beans and the cilantro lime rice. It sounded really yummy so I gave it a try and we loved it. It was kind of nice to skip the tortilla. I think we could have added some lettuce to the other ingredients and that would have been really yummy too.  Next time I make it I will serve it over a bed of lettuce. My mom was so excited about this meal that she even sent me a snapchat picture so I could see how hers turned out. I would share the picture with you but of course with snapchat it is already gone.

Chicken, Cilantro Rice and Seasoned Black Beans

An amazing chicken to use in this recipe would be  the Cilantro Lime Chicken. The rice is really easy to make because you just add lime and cilantro to the rice after you cook it. See full instructions for the rice and instructions for the black beans in the recipe card below.

Corn Salsa, Guacamole, Cheese, Sour Cream and Lettuce.

The corn salsa gives the Chipotle bowl and extra refreshing taste. Check out my recipe for the corn salsa. Guacamole can be smooth or chunky I have given instructions for both in this guacamole recipe. Cheese and sour cream go on top of the bowl. Lettuce would be great on the bottom. I did not do it this time but would like to try it next time I make this meal.

To make this TERRAfit-friendly, use coconut oil (or other healthy oil) instead of vegetable oil. Also, use brown rice in place of white rice. (The rice cooking time will need to be adjusted accordingly.) Skip garnishing with sour cream too.

Chipotle Bowl Recipe

Yield: 4-6 bowls | Serves: 4-6

Ingredients

  • Chicken:

  • 2-3 breasts of chicken
  • 2 limes
  • 1 tsp Minced Garlic
  • 1 tsp Minced Onion
  • 1 tsp Ground Cumin
  • 1 tsp Oregano leaves
  • ½ tsp cilantro leaves
  • ½ tsp black pepper
  • Beans:

  • 1 tablespoon vegetable oil
  • ½ cup yellow onion, diced
  • 2 cloves garlic or 2 tsp minced garlic
  • 2 cans black beans (15.5 ounce)
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • ½ teaspoon pepper, fresh ground
  • 1 bay leaf
  • 1 teaspoon lime juice
  • Rice:

  • 2 cups water
  • 1 cup white rice
  • 1 tablespoon butter
  • 1 teaspoon salt
  • ¼ cup lime juice
  • 2 tablespoons cilantro, chopped

Instructions

  1. Chicken:

  2. Place chicken in crock pot and sprinkle with the juice of one lime and the spices listed.
  3. Cook on low for 4-6 hours until it reaches shred consistency.
  4. Shred chicken.
  5. Squeeze second lime over the chicken.
  6. Beans:

  7. Heat oil in a medium pot.
  8. Saute onions and garlic.
  9. Add remaining ingredients except lime.
  10. Simmer for 30 minutes.
  11. Stir in lime juice before serving.
  12. Rice:

  13. In a medium pan heat 2 cups of water and 1 T butter to boil.
  14. Add 1 cup of rice and salt.
  15. Lower heat to low and cover.
  16. Cook for 20 minutes.
  17. Stir in lime and cilantro after rice is cooked.
  18. To make Bowl:

  19. Combine all ingredients over a bed of lettuce layer, beans, rice, chicken, cheese, salsa, guacamole, and sour cream.
  20. Enjoy!
