What You Need to Make Air Fryer Stuffed Peppers

  • 1 pound ground beef
  • 1 taco seasoning packet (about 1 to 2 tablespoons)
  • 1 cup cooked rice
  • 3 green onions, chopped
  • 1/2 cup black beans
  • 1 cup frozen corn
  • 1 cup shredded cheese (optional), plus more for topping
  • Garnishes: salsa, sour cream, tortilla chips, etc

The ingredients for this recipe are adaptable. If there is an ingredient you don’t like, you can easily replace it with something you do or omit it altogether.

You can also use this perfected, homemade taco seasoning mix instead of a store bought packet.

How to Make Stuffed Peppers in the Air Fryer

  • Brown the ground beef and drain, if needed. Add the taco seasoning as instructed by the package.
  • Add the rice, onions, beans, corn, and cheese (if using) and stir it all together.
  • Slice the tops off the peppers and clean out the inside, cut the peppers in half lengthwise, then stuff them with the ground beef mixture.
  • Place up to 6 peppers in the air fryer basket and cook for 10 minutes at 350°F/177°C. Sprinkle remaining cheese on top of the peppers and cook for an additional 5 minutes or until the cheese melts and the peppers are tender.
  • Serve plain or topped with salsa and sour cream.

Freezer Meal Instructions:

  • Prepare the stuffed peppers as written. Instead of cooking them in the air fryer, individually wrap them in plastic wrap. Place the peppers on a cookie sheet, then place in the freezer. Once frozen, store in a plastic bag.
  • Pull out the peppers the morning you plan on using them. Then, cook at 350°F/175°C for 10 minutes. Check on them, add cheese, then cook for an additional 5 minutes.

  • We found that we prefer freezing the filling only and then put in fresh peppers when ready to cook. Doesn’t take much extra time and the pepper is not as mushy from being frozen.
