The Best Air Fryer Stromboli Recipes
Several months ago, I shared some quick and easy dinner recipes on YouTube. One of our favorite recipes in this video was the pepperoni Stromboli. Viewer Elizabeth shared with me in the video comments that they call this recipe these stuffed breads. Elizabeth shared that they make a pizza one, a roast beef with caramelized onions and sharp cheddar cheese, and a ham and Swiss cheese sauce with caramelized mushrooms.
After reading her comment, I knew I had to try more creative Stromboli variations. So, today, I am excited to share with you how to make a roast beef and provolone Stromboli. This recipe will give you Philly cheesesteak vibes with its caramelized onions and mushrooms, melty provolone cheese, and toasted to perfection in the air fryer. Yes, it is as delicious as it sounds! Philly Cheesesteak Stromboli in the Air Fryer
To make this Stromboli variation, you will need:
- 1 pizza crust (I used a thin crust, but you can use whatever type of crust you love)
- 1/2 red or yellow onion, sliced
- 6 ounces mushrooms, sliced (8-10 mushrooms)
- 1 bell pepper
- 12-16 slices of roast beef
- Olive oil
- 6-8 provolone slices
- Shredded provolone cheese to sprinkle on top (optional)
- 1 egg wash
How to Caramelize the Vegetables
Before you assemble your Stromboli, you need to prepare the contents. This Stromboli tastes amazing with caramelized onions, bell peppers, and mushrooms.
We’re going to do this on the stovetop. Bring a pan to medium-high heat. Add some olive oil to the pan while it warms up. Once warm, add the sliced onions, mushrooms, and bell peppers. Sprinkle some salt on top to bring out the moisture. The vegetables will go from hard to soft to caramelized in about 15 or so minutes. Be patient because the results are so worth. Remember to stir the vegetables often and add any water to help bring out the caramel color.
The Most Amazing Provolone Dipping Sauce
You can make and enjoy this recipe without this amazing provolone dipping sauce, but it is just not the same. If you choose to endeavor, start your cooking process by making this sauce. You will need:
- 2 tablespoons butter
- 3 tablespoons all purpose flour
- 2 cups milk
- ½ cup grated provolone cheese (shredded cheese works too)
- Salt and pepper to taste
To make the sauce:
- Melt butter in a medium saucepan over medium heat. Let the butter cook for 30 seconds or so to evaporate water. It should bubble up, but don’t let the butter brown.
- Add the flour and cook the flour into the butter by stirring continuously, for no more than 2 minutes, or until flour turns slightly golden. (This Is called white roux, which will thicken the cheese sauce and make it nice and smooth.)
- Slowly pour in milk into the roux, while whisking the mixture continuously. Once all the milk is added, cook it for another 2-3 minutes, or until the mixture comes to a boil.
- Remove from heat and stir in cheese. Whisk until the cheese is fully melted. Season with salt and pepper to taste.
- Let it cool and thicken slightly before using.
How to Assemble a Stromboli
Whether you make this tasty roast beef Stromboli or a ham and cheese Stromboli, the process is relatively the same.
First, lay out the pizza crust dough on a piece of parchment paper or silicone baking mat. Cut the dough in half.
Next, assemble the Stromboli by spreading on about 2 tablespoons of the provolone cheese sauce*, 6-8 slices of roast beef, the sautéed vegetables, and 3-4 provolone cheese slices on top.
*Important note: The provolone cheese sauce as the base is optional. I think it makes the Stromboli more cheesy, juicy, and delicious. You can omit it as a base on your dough, and use it just as a dipping sauce. Or, you can omit it altogether.
After, lightly spray the air fryer basket.
Then, roll the rectangles of dough up into logs, like you would with cinnamon rolls. Pinch the edges together and tuck and pinch the ends under. Brush the tops of the Stromboli with the egg wash. Sprinkle additional cheese over top if desired. Use a sharp knife to gently cut a diagonal slit, every 2 inches, on the top of each Stromboli.
How to Cook Stromboli in the Air Fryer
Cooking Stromboli in the air fryer is the best part of this recipe. In my 5.8 qt Cosori Air Fryer, I’m able to cook just one log at a time. Place the log in the air lightly sprayed air fryer basket at cook at 340°F/170°C for 8-10 min, or until the dough is cooked. Sprinkle on top with more shredded provolone cheese and cook for an additional 2-3 minutes, or until the cheese is melted.
Then, carefully remove the Stromboli from the air fryer basket and cook the other log. Enjoy as is or serve with the provolone cheese sauce.
Other Stromboli Variations
Here are some other great ideas for what you can put inside of your Stromboli. Be creative with the proportions, and make it work for you and your personal tastes! Happy air frying!

- Beef, broccoli, and mozzarella cheese
- Cheese, pepperoni, olives, mushrooms, and peppers

Final Thoughts

Air Fryer Roast Beef Stromboli

Provolone Cheese Sauce (optional, but highly recommended)
- 2 tablespoons butter
- 3 tablespoons all purpose flour
- 2 cups milk
- ½ cup shredded provolone cheese
- salt and pepper to taste
Instructions
- On the stovetop, make the provolone cheese sauce.
- On the stovetop, caramelize the onions, mushrooms, and bell peppers on medium-high heat. (See in-post notes about caramelizing vegetables).
- Lay out the pizza crust dough on a piece of parchment paper or silicone baking mat. Cut the dough in half.
- Assemble the Stromboli by spreading on about 2 tablespoons of the cheese sauce onto the pizza crust*(see note).
- Then, add 6-8 slices of roast beef, the vegetables, and finally 3-4 provolone cheese slices.
- Lightly spray the air fryer basket with avocado oil.
- Roll the rectangles of dough up into logs, like you would with cinnamon rolls. Pinch the edges together and tuck and pinch the ends under. Brush the tops of the Stromboli with the egg wash. Sprinkle additional cheese over top if desired. Use a sharp knife to gently cut a diagonal slit, every 2 inches, on the top of each Stromboli.
- Place one of the logs in the air fryer basket. Cook at 340°F/170°C for 8-10 min, or until the dough is cooked.
- Sprinkle on shredded provolone cheese (optional) and cook for an additional 2-3 minutes, or until cheese is melted and crust is golden.
- Carefully remove from the air fryer basket and cook the other log.
- Enjoy as is or serve with the provolone cheese sauce.
Provolone Cheese Sauce
- Melt butter in a medium saucepan over medium heat. Let the butter cook for 30 seconds or so to evaporate water. It should bubble up, but don’t let the butter brown.
- Add flour and cook the flour, stirring continuously, for no more than 2 minutes, or until flour turns slightly golden. (This Is called white roux, which will thicken the cheese sauce and make it nice and smooth.)
- Slowly pour in milk into the roux, while whisking the mixture continuously. Once all the milk is added, cook it for another 2-3 minutes, or until the mixture comes to a boil.
