Air Fryer Pepperoni Stromboli

What is the difference between a calzone and a stromboli?
The most significant difference between a calzone and stromboli is their shape. Calzones are folded as a single serving in a half-moon shape, while stromboli is a long log designed for cutting into smaller portions. Calzones are usually designed for dipping into sauce, while stromboli has the sauce baked in with the rest of the fillings.
Both are pizza-like dishes filled with gooey cheese, customizable fillings, and a crispy crust baked to golden perfection. Try altering the instructions to make a calzone instead!

You’ll be obsessed with how the melted cheese stretches and the sound of the crispy crust when you cut into it. We love pepperoni pizza toppings in our stromboli. However, this recipe is customizable, so you can add your favorite pizza toppings or use what’s in your refrigerator.
Ingredients:
- Self-rising flour
- Nonfat plain Greek yogurt
- Pizza sauce
- Shredded mozzarella cheese
- Pepperoni
- Egg wash
- Garlic powder (optional)
- Italian seasoning (optional)
Recipe Substitutions and Alternatives
Any of your favorite pizza toppings will be delicious. Try a few of these combinations:
- Ground sausage, mushrooms, olives, and bell pepper
- Rotisserie chicken with bacon, mushrooms, and a white sauce
- Ham and pineapple
If you don’t have self-rising flour, no problem. Try this substitution to make 2 cups of self-rising flour:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt

How to Make Pepperoni Stromboli in the Air Fryer
Step 1: Make the stromboli dough
This 2-ingredient dough is by far the easiest dough you will ever make. Only yogurt and flour! I love the simplicity of not waiting for the dough to rise or gathering a bunch of ingredients. However, any pizza dough, including store-bought, will work with this recipe. My favorite homemade pizza dough recipe would be a great option.
Simply mix self-rising flour and nonfat plain Greek yogurt until a thick, shaggy dough forms.
Step 2: Fill the dough
Roll out the dough into two long rectangles that fit in your air fryer basket. The dough should be about ¼-inch thick.
Spread sauce over your dough, leaving the edges free. Sprinkle with seasonings and cheese, and top with pepperoni (or your favorite toppings!).
Step 3: Create a stromboli
Once you have all your toppings, it is time to roll it up. Making a stromboli shape is just like rolling cinnamon rolls. Starting from one of the long edges, tightly roll the dough, keeping all the fillings tucked in. Pinch the edges to seal it shut. Tuck the ends under to seal them closed.
Step 4: Prepare the top
Carefully place the stromboli in the air fryer basket, seam side down, with space between each one. They might barely fit—I got my stromboli snuggled in, laid diagonally, still with a small gap between them.
Is your stromboli too long to fit in the air fryer? Wrap it around the basket, or make it into pizza snails!
Brush the tops with the egg wash, make a few diagonal slits, and sprinkle with cheese. You can also garnish your stromboli with fresh chopped parsley.
Step 5: Air fry
Air fry at 340°F (171°C) for 10 minutes. Check on your stromboli in the last few minutes, as cooking time will vary. The tops should be golden brown, and cheese will be bubbling through the vent slits. You can also use an instant-read thermometer to determine whether the center is heated through. In the thickest part, stromboli should reach 200°F (93°C).
If the top is browning but the center is still not cooked through, reduce the heat to 320°F (160°C) and air fry for another few minutes.
How long to cook Pepperoni Stromboli in the oven
You may want one long stromboli that won’t fit in your air fryer, or you may still need an air fryer! I highly recommend the Cosori 5.8QT air fryer. In the meantime, the oven will do 😜
Oven Instructions:
- Preheat oven to 400°F (200°C).
- Spray the baking sheet with oil.
- Instead of making two strombolis, leave the dough in one large rectangle.
- Add toppings and roll it up.
- Place the stromboli on the prepared baking sheet.
- Brush with egg wash, sprinkle with cheese, and cut diagonal slits (all as instructed in the recipe).
- Bake in the oven for 22-25 minutes, until golden brown and cooked through.

Air Fryer Pepperoni Stromboli
Equipment
Ingredients
- 1 ¾ cups self rising flour
- 1 cup nonfat plain Greek yogurt
- 4 tablespoons pizza sauce plus extra for dipping
- 1 cup shredded mozzarella cheese plus extra for topping
- 2 ½ ounces pepperoni
- 1 egg beaten
- Italian seasoning optional
- Garlic seasoning optional
Instructions
- In a large mixing bowl or stand mixer, combine self rising flour and Greek yogurt until a thick dough forms. Dough will be shaggy and thick, but should mostly stick together when pressed into a ball. Roll out dough into a 10"x14" rectangle on a lightly floured surface. Cut the rectangle of dough in half to form two rectangles (to fit in the air fryer).
- Spread about 2 tablespoons pizza sauce on each rectangle, leaving a 2-inch border around the edges. Sprinkle 1/2 cup cheese over the sauce on each, then top with pepperoni.
- Roll the rectangles of dough up into logs, like you would with cinnamon rolls. Pinch the edges together and tuck and pinch the ends under. Brush the tops of the stromboli with the beaten egg. Sprinkle with Italian seasoning, garlic, and additional cheese. Use a sharp knife to gently cut diagonal slit, every 2 inches, on top of each stromboli.
- Preheat air fryer. Spray air fryer basket with oil. Place both stromboli in the air fryer basket, if they will fit without touching each other. Air fry at 340°F for about 10 minutes, until golden brown and cooked through. Let rest for a few minutes, the cut into slices and serve with extra pizza sauce for dipping.

Oven Instructions: Preheat oven to 400°F. Spray baking sheet with oil spray. Follow instructions above, but keep stromboli as one big roll and place on baking sheet. Bake for 22-25 minutes, until golden brown and cooked through.
I’m trying to get more veggies in my diet. If I add onions, peppers, and mushrooms how mush more cooking time should I add? Should I precook the veggies? Thanks!
I’m not sure you’d need more cooking time… and precooking your veggies will depend on how crunchy you like them… if it were me, I’d probably give them an 8 minute roast in the air fryer first. 🙂
Made this tonight and it came out great! Love how fast and easy the Greek yogurt dough is. To make exactly the amount of self-rising flour for this I whisked together: 1 3/4 c. all-purpose flour, 2 1/2 tsp baking soda, and 1/4 tsp salt.
Start to finish this recipe only took 20 minutes, perfect for a weeknight dinner.
