Make BBQ Chicken Sweet Potatoes in the Air Fryer
This recipe is simple and delicious. You probably already have all the ingredients on hand. Plus, you can totally adapt this recipe and its toppings to fit your needs. For the BBQ chicken stuffed sweet potatoes, you will need:
- 2 sweet potatoes
- ½ pound chicken, cut into bite size pieces
- ½-1 bell pepper, cut into bite size pieces
- ½ cup red onion, cut into bite size pieces
- ½ cup frozen corn
- ½ cup black beans
- ½ tablespoon oil of choice
- ½ teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon brown sugar
- ½ teaspoon paprika,
- ¼ teaspoon chili powder
- Sprinkle black pepper
Toppings:
- Avocado
- Cherry tomatoes
- BBQ sauce mixed with Greek yogurt or sour cream
- Cilantro
I love this recipe because you only need halves to throw it together, 1/2 a pound, 1/2 a cup, 1/2 a tablespoon, etc. It’s so simple!
How to Cook Sweet Potatoes in the Air Fryer
The longest part of this recipe is cooking the sweet potato. Before you begin prepping the other ingredients, I recommend start cooking your sweet potato.
Wash the sweet potatoes clean, then dry them. With a fork, stab the sweet potato 3-4 times. This way air will circulate and it will cook.
Rub a little oil onto the sweet potatoes, season with salt and pepper (optional), then place in the air fryer basket. Cook at 380°F/190°C for 35 minutes.
Important Tip about cooking sweet potatoes
The cooking time will depend greatly on the size of your potato as well as the make and model of your air fryer. Watch your potato closely and don’t be afraid to add more time if needed.
Your sweet potato will be done cooking when it is easily pierced with a knife.
How to Make BBQ Chicken Stuffed Sweet Potatoes for the Air Fryer
While the sweet potato cooks, prepare your BBQ chicken. In a bowl, combine the chicken, beans, corn, red onions, bell pepper, with the seasonings and oil. Mix everything together and set aside.
Then, when there is 15 minutes left, add the chicken and veggies to the air fryer basket. When there is 7 minutes left, stir the veggies and check on the chicken and sweet potatoes. Chicken needs to register at 165°F/74°C. The cooking time really depends on the size of your potatoes, so you will just have to watch it carefully. Adjust the time as needed.
If your chicken is done after 7 minutes and the vegetables reached its desired tenderness, remove the BBQ chicken mixture from the air fryer basket and place it in a bowl covered with tin foil. Let the sweet potatoes finish cooking.
Simple Air Fryer BBQ Chicken Stuffed Sweet Potatoes
Once the sweet potatoes and chicken are finished cooking, remove the sweet potatoes from the air fryer basket. Cut open the sweet potato and top with veggies, chicken, cilantro, tomatoes, BBQ dressing, and enjoy!

- Prepare the sweet potatoes: wash and scrub your sweet potatoes so they are clean and free from dirt. Pierce with a fork, 4-5 times. Massage oil on the potatoes. Place in the air fryer basket and sprinkle with salt. Cook at 380°F/190°C for 35 minutes.
- In a bowl, combine the chicken, corn, bell pepper, red onion, black beans with the oil and seasonings.
- When there is 15 minutes left, add the chicken and veggies to the air fryer basket.
