Cowboy Caviar with Avocado

I have had this dip quite a few times at parties and such, but have never made it myself.  I wanted to make one that called for avocado, as we had gotten about 8 of them in our Bountiful Basket, but they weren’t quite ready in time for some guacamole on Cinco de Mayo.  When they were ready to use, we needed to use most of them up, and fast!  I have seen lots of different recipes for cowboy caviar, but kind of came up with my own, based on what I had available…it was super yummy!  If you don’t care for avocado, just omit it, and I am sure it will still taste good.  You could even change out the beans, add more beans, or put in fresh diced tomatoes, rather than canned.  Use what you like, and what you have on hand, that’s what I did, and it was rather tasty!

INGREDIENTS:

5 ripe avocados, cut into 1/2 inch cubes

1 lime, juiced

8 cloves garlic, minced

1 small bunch of cilantro, chopped

5-6 green onions, sliced

1 jalapeño, seeded and diced finely

1 green bell pepper finely diced

1 can of corn, drained

1 can of black beans, drained and rinsed

1 can of diced tomatoes

salt and pepper to taste

DIRECTIONS:

Prepare all ingredients and mix together in a bowl.

That’s it, it was that simple, but oh so tasty!  May I also recommend eating it with your favorite tortilla chips…my new favorite are the Hint of Lime Tostitos…so good!  It would also be tasty with some diced grilled chicken on a bed of lettuce, and maybe a bit of cheese.  A fresh and crisp taco salad.
