A perfect side dish for our Easter BBQ, these potatoes were excellent!! Â Super cheesy and flavorful, and pretty simple to boot! Â Any easy dish for a potluck, BBQ, or just for the family.
Serves 8-10 for about $0.48/serving
6 medium potatoes – $0.79
1/4 cup butter or 1/4 cup margarine – $0.25
1 cream of chicken soup – $0.89
1 pint sour cream – $0.64
4-5 green onions, sliced – $0.34
2 cups shredded cheddar cheese – $1.28
Preheat oven to 350 degrees.
Boil potatoes in skins; peel and grate. (I used golds, so I didn’t peel them)
Heat Â¼ cup butter with cream of chicken soup over medium heat.
Blend sour cream, onions and cheese into soup until cheese is melted.
Place potatoes in buttered 9×13 inch baking dish. Â Pour cheese sauce over top and combine. Â Sprinkle with salt and pepper and
bake for 45 minutes.
