- 6 bell peppers (any color)
- 1 pound ground beef
- 1 taco seasoning packet (about 1 to 2 tablespoons)
- 1 cup cooked rice
- 3 green onions, chopped
- 1/2 cup black beans
- 1 cup frozen corn
- 1 cup shredded cheese (optional), plus more for topping
- Garnishes: salsa, sour cream, tortilla chips, etc

You can also use this perfected, homemade taco seasoning mix instead of a store bought packet.
How to Make Stuffed Peppers in the Air Fryer
Once you know that you have all the ingredients you need, first start by browning the meat. When the meat is fully cooked, drain any excess grease and add the taco seasoning. Then add the rice, onions, beans, corn, and cheese and stir it all together.
Next, prepare the peppers by cutting off the top of the peppers. Then cut the peppers in half lengthwise. Clean out the peppers and then stuff them with the ground beef mixture.
Place up to 6 peppers in the air fryer basket and cook for 10 minutes at 350°F/177°C. Sprinkle any remaining cheese on top of the peppers and cook for an additional 5 minutes or until the cheese melts and the peppers are tender. Repeat for the remaining peppers.

Loved this recipe. Love how quickly it is ready to eat…nom nom
Thank you, Pat!
We found that we prefer freezing the filling only and then put in fresh peppers when ready to cook. Doesn’t take much extra time and the pepper is not as mushy from being frozen. I’m getting ready to fix them now from extra filling I froze when I made the recipe the first time. Delicious!!! Love your videos…you are my “go to” for using my air fryer.
So great, Rosemary! Thanks for the feedback! I agree, just freezing the filling is still time saving!
Can’t wait to try these! My taco seasoning (Penzeys) says to add water to meat after sprinkling the seasoning on. Would I do that for the ground beef in this recipe as well? Or just do the dry seasoning?
I made the stuffed peppers today: I changed the recipe to a vegetarian version and used corn instead of black beans.
