White Chocolate Blondies with Lemon and Poppy Seeds
This is such a wonderful combination! The white chocolate adds a decadent, comforting richness, while still letting the lemon poppy seed combo shine as it should.
These lemon poppy seed white chocolate blondies are soft, dense, a bit gooey, and chewy. Yum! And they’re rather pretty, aren’t they?
My favorite thing about this recipe is how nice and easy it is. After only 10 minutes or so, my blondie batter was finished and ready to go in the oven to bake.
Lemon Poppyseed White Chocolate Blondie Ingredients
You can find lemon curd at many grocery stores near the jams and preserves. It is a tangy, creamy lemon spread. And you can definitely make it from scratch! I use homemade lemon curd, which actually happened to be overcooked and not quite ideal in this particular instance and photo. Just pretend it looks like this lemon curd. Thanks. 😉
The blondies still turned out great though. And don’t worry, the next time I made homemade lemon curd it turned out perfectly!

Baking Tips & Finishing Touches
Once you’re done mixing everything together, you end up with a nice, thick batter. Pour and spread it into your prepared lined pan and bake away!
Try to wait patiently while they cool, then cut them into small squares. Dust the bars with a little bit of powdered sugar and they are ready to serve. These blondies taste great warmed, at room temperature, or chilled.

Lemon Poppy Seed White Chocolate Blondies Recipe
Equipment
- 8x8 inch pan
Ingredients
- 4 tablespoons unsalted butter
- ¾ cup white chocolate chips
- 1 cup all-purpose flour
- ½ cup granulated sugar
- ⅓ cup white chocolate chips
- ½ teaspoon baking powder
- ½ teaspoon kosher salt
- 2 large eggs
- ¼ cup prepared lemon curd
- 2 tablespoons poppy seeds
Instructions
- Preheat oven to 350°F/175°C and line an 8×8 inch baking dish with parchment paper.
- Place butter in a microwave safe bowl and microwave for 30-45 seconds, until butter is melted and hot. Add 3/4 cup white chips and let sit for 1 minute. Stir until smooth, if needed place back in microwave for an additional 15-30 seconds to melt through.
- Stir flour, sugar, white chocolate chips, baking powder and salt into the melted chocolate mixture. Stir in eggs and lemon curd and poppy seeds until well combined. Transfer to prepared baking dish, spreading evenly. Bake for 30-35 minutes, until cooked through.
- Let cool completely then cut into squares. Dust with powdered sugar and serve at room temperature or chilled.
Can this recipe be doubled into a 9 x 13 pan?
I haven’t tried it, but I wonder if they would not bake through in the center very well. Let me know if you try it out!
