When contemplating a fabulous “fall” browie/bar recipe, I decided I’d deviate from the traditional chocolatey brown version and do something on the lighter side…. color that is, not calories. 😉 Thanks to the wonderful world of Pinterest, I discovered these ah-MAZ-ing triple layer dessert bars sure to knock the socks of your loved ones and friends… assuming you’re going to share of course!

Caramel Cheesecake Apple Blondies

Serves: 9 2x2 inch squares

Ingredients

  • Apple Blondie Base:

  • ½ apple, finely diced
  • 6 tablespoons unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Caramel Cheesecake Layer:

  • 1 8oz cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • 3 tablespoons granulated sugar
  • 1 large egg
  • 3 tablespoons caramel ice cream topping
  • Streusel Topping:

  • 3 tablespoons light brown sugar
  • 2 tablespoons granulated sugar
  • 3 tablespoons flour
  • ¼ teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold, cubed
  • 1 tablespoon caramel ice cream topping (Optional)

Instructions

  1. Line 8x8 inch square pan with parchment paper/or grease with butter. Preheat oven to 350°F.
  2. Apple Blondie Layer:

  3. In a mixer, cream butter and brown sugar until smooth. Add in egg and vanilla and mix to combined.
  4. Add the flour, cinnamon, baking powder, and salt and mix to just combined. Use a spatula and fold in chopped apples. Transfer to pan and bake for 10 minutes. Remove from oven.
  5. Caramel Cheesecake Layer:

  6. While blondies are baking, in a large bowl, cream the cream cheese until smooth. Mix in the vanilla, sugar, and egg until just combined. Stir in the caramel until combined. Spread on top of blondies.
  7. Streusel Topping:

  8. In a medium bowl, combine the brown sugar, sugar, flour, and ground cinnamon. Cut in the cold butter using a pastry cutter, or 2 forks, until mixture is crumbly. Spread on top of cheesecake layer. Bake for an additional 25-30 minutes, until the middle is set and top is golden. Drizzle caramel ice cream sauce on top, if desired.
  9. Allow bars to cool 1 hour. Refridgerate until chilled all the way through or overnight before serving.
