Delicious and Easy Mexican Bites
These little Mexican bites are full of flavor and there’s no cooking required to make them! They’re a great healthy appetizer, party food, or just an awesome snack you can make quickly at home.
Just layer black beans, salsa, the cream cheese mixture, and green onions into some Tostitos Scoops! Pretty easy. Usually, a 10-ounce bag of the Tostitos Scoops is enough to find 50 whole tortilla scoops for this recipe.
They come together quickly too if you recruit some extra hands to help you assemble them. Be prepared that they might disappear even more quickly than it took to make them though.
Tips for the Best Mexican Bites
For the best flavor, choose a salsa that you enjoy. I used Pace Chunky Mild Salsa or Pace Picante Mild Salsa, and we love the Tostitos Multigrain Scoops.
The cream cheese/sour cream mixture is the real kicker though. A perfect combination of seasonings, creaminess, and flavor. It is a big part of what makes these Mexican bites so yummy. Even with the chili powder, the sour cream and cream cheese mixture is not spicy.
The Perfect Mexican Party Food
I brought these to a party and they were a hit, but I should’ve doubled the amount! They were gone in a snap and with rave reviews.
The serving platter that I used is about 16 inches by 11.5 inches, just to give you an idea. Every so often, especially around the holidays, Costco has some great deals on serving platters and things like that. Here are some serving platters on Amazon.

Easy Mexican Bites Recipe (Perfect Party Food)
Equipment
- Small bowl
Ingredients
- 4 ounces cream cheese softened
- ⅓ cup sour cream
- 1 garlic clove minced
- ½ teaspoon dried oregano
- ½ teaspoon chili powder
- 50 Tostitos Tortilla Scoops
- 1 cup canned black beans rinsed
- ¾ cup chunky salsa
- 2 green onions minced
Instructions
- In a small bowl, combine cream cheese, sour cream, garlic, oregano, and chili powder.
- Place tortilla scoops on a serving platter and fill with the beans, distributing evenly.
- Then add the salsa and top with a small dollop of the cream cheese mixture.
- Evenly sprinkle the green onions over the tops.
- Serve immediately.
