Halloween Dinner Ideas made Fun & Easy!

This is a fun recipe for Halloween time, we love to make it on Halloween night before going out. I got this idea from my cousin when my boys were really little and it has become a Halloween tradition at our house. The kids love it when we have dinner in a pumpkin for Halloween.

Dinner in a Pumpkin

Ingredients:

  • 1 medium Pumpkin {about the size of a soccer ball}
  • 1 medium Onion
  • 2 Tbsp Olive Oil {you can use vegetable oil}
  • 1 lb Ground Beef
  • 1 lb Ground Turkey {you can use 2 lbs ground beef but, I added turkey to make it more healthy}
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Brown Sugar
  • 1 {4 oz} can Mushrooms
  • 1 {15 oz} can Cream of Chicken {you can use Cream of Mushroom if you’ll like}
  • 2 cups Cooked Rice

Directions:

Preheat oven to 350 degrees. Cut off top of Pumpkin and clean out seeds, scrap inside clean. Cut onion into small pieces, on the stove add oil to pan then saute onions. Add ground beef & turkey, cook on medium until fully cooked. Add brown sugar & soy sauce, stir until sugar is dissolved. In a large bowl add cooked rice, mushrooms, cream of chicken. Stir until fully mixed, add meat mixture stir again until fully mixed. Fill pumpkin with rice/meat mixture. Put the top back on the pumpkin & place pumpkin on cookie sheet. Bake at 350 degrees for 1 hour. When you serve it scrap some of the pumpkin with each scoop so good!

Witches Fingers

Ingredients:

  • Dinner Rolls raw dough {I used biscuits, you can use any bread dough}
  • Almond Slivers

Directions:

Preheat oven to 350 degrees. Roll dough on a flat surface making them oblong. Cut 4 slits with a knife {to make the knuckles}. Add almond sliver to top as a finger nail. Bake for 10 minutes. EASY!

 

Halloween Pumpkin Dip

Ingredients (for 4 cups):

  • 1 {16 oz} Frozen Whipped Topping
  • 1 {5 oz} Instant Vanilla Pudding {I bet it would even taste great with chocolate pudding!}
  • 1 {15 oz} can Solid Pack Pumpkin
  • 1 tsp Pumpkin Spice

Directions:

Mix canned pumpkin, pumpkin spice, and dry pudding mix. Fold in whipped topping. Refrigerate until ready to serve. Serve with fruit, vanilla wafers, or graham crackers. Cute if served in small hollowed out pumpkin!

Baked Pumpkin Seeds

Ingredients:

  • Pumpkin Seeds {from hollowed out pumpkins}
  • 1 Tbsp Mrs. Dash
  • 1/2 tsp Seasoning Salt

Directions:

Preheat oven to 350 degrees. Wash pumpkin seeds getting all ‘strings’ off them. Put wet pumpkin seeds in a bowl, pour spices in same bowl & stir. Place the seasoned pumpkin seeds on a cookie sheet. Bake for 20 minutes.

  • 1 medium Onion, diced
  • 1 Tbsp Garlic. minced
  • 2 Tbsp Olive Oil {you can use vegetable oil}
  • 2 lbs Ground Beef or Ground Turkey
  • 1/2 cup milk
  • 1 {4 oz} can Mushrooms or fresh mushrooms
  • 1 {15 oz} can Cream of Mushroom
  • 2 cups Cooked Rice

Instructions

  1. Preheat oven to 350 degrees.
  2. Start cooking your rice.
  3. Cut off top of Pumpkin and clean out seeds, scrape inside clean.
  4. Saute onion and garlic in olive oil
  5. Add ground beef or turkey, cook on medium until fully cooked.
  6. Add mushrooms, cream of mushroom and milk.
  7. Add rice when it is cooked. Stir until fully mixed.
  8. Fill pumpkin with rice/meat mixture. Put the top back on the pumpkin & place pumpkin on cookie sheet.
  9. Bake at 350 degrees for 1 hour. This can vary depending on the size of your pumpkin. It is done when you can easily scrape pumpkin out from the inside to serve with the meat and rice.
