Homemade Cheeseburger Quesadillas

Fill, fold, and grill… these simple Cheeseburger Quesadillas are a yummy 30-minute meal. They’re nice and filling, super family friendly, and you can customize them however you want!

This recipe is delicious paired along-side soup in winter, or a crisp salad in summer. I also like to whip up a little secret sauce (in Idaho we call it Fry-sauce), for dipping.

Ingredients

Sometimes I add sliced dill pickles inside my quesadillas to go along with the cheeseburger flavor. You can also add crisp bacon, even shredded lettuce, and any and all your favorites…be creative!

For the tortillas, I have found that low-carb tortillas work very well, cutting back on additional fat and carbs. Gluten-free tortillas work really well too. If you want you could even make homemade tortillas, it will just add some extra time to the recipe.

The filling for these cheeseburger tortillas can be made in one skillet. Start by browning and draining the ground beef then add water, vinegar, onion soup mix, ketchup, mustard, and garlic.

Stir to combine and simmer over low heat for 10 minutes.

Start by heating a large non-stick skillet over medium heat. Next, add a large tortilla and then pour your filling onto half of the tortilla. To finish the filling off, add cheese and chopped tomato (and pickles if you’d like).

Now it’s time to fold and grill your quesadilla. I like to press it down and compact it (as you can see from the photos above I just used a lid that I had in the kitchen). After you’ve grilled one side for 2 to 3 minutes, flip the quesadilla over to grill the other side.

Once it’s crispy and grilled to perfection, turn it onto a cutting board and slice it with a pizza cutter.

Serving Tips

My favorite way to serve these simple Cheeseburger Quesadillas is with warm roasted red-pepper tomato soup, garnished with sliced avocado. It really is my comfort food on a cold winter night!

  • Add filling to 1/2 of the tortilla, sprinkle with generous amount of cheese and tomatoes.
  • Fold tortilla in half and hold it in place with a press.
  • Watch carefully and turn quesadilla over when it's golden brown, generally 2 to 3 minutes.
  • Grill the other side and remove immediately from skillet to a cutting board.
  • Slice quesadilla in half or quarters with a pizza cutter.
  • Serve immediately and enjoy.
