Broccoli Cheese Soup


I LOVE Broccoli Cheese soup!  Probably my favorite soup of all time.  I have to admit though, I have never made it myself.  Until tonight.  I found this recipe and was excited to give it a try….finally a recipe that did NOT use Velveeta!  I just wanted something with real ingredients.  The smell and flavor were absolutely amazing.  The consistency and texture however was way off!  Next time I would saute the onions in the pot first, and then add the broth and broccoli and let that simmer until the broccoli is tender.  Then I would add in the milk and melt in the cheese, and serve.  I will be making it again, loved that it was just 5 ingredients and super simple.  

Serves 6 for about $1.10/serving


NOTE:  Directions below are from original site…I would personally change it a bit as I said above.  If you try it as is though, and it works out, let me know!!

3 cups chicken or vegetable stock – $0.87

2 cups chopped broccoli florets, fresh or frozen – $0.98

1 small white onion, diced  – $0.33

1 (15 oz.) can evaporated milk – $1.89

2 cups shredded sharp cheddar cheese  – $2.36

Stir together stock, broccoli, diced onion, evaporated milk and cheese together in a medium saucepan. Heat over medium heat until simmering (but not boiling, or the soup will curdle). Then reduce heat to medium low, cover, and simmer for 15 minutes, stirring occasionally, until the onion is cooked and soft.

Season soup with salt and pepper if needed.

    Great! Let me know how it turns out. I think adding the milk and cheese at the end is key, but let me know what you do and how the consistency is. Flavor was great, consistency was just off.

    You don’t have to publish this if you don’t want. I didn’t see your response and made it as is. The consistency was very weird like you said, taste wise it was pretty good. I added a half pound velveta cheese at the end in little cubes so they melted fast and it turned out AMAZING! So I’d recommend adding the velveeta and adding the milk and cheese towards the end as well in the actual recipe incase someone doesn’t read the comments like me. Great recipe just needed a little bit more.
