Crockpot Green Chili Chicken Recipe
I first found this Crockpot green chili chicken recipe when I was looking for an easy way to make the green chile chicken served at a restaurant called Bajio. It was mine and my husband’s favorite! A ton of people would get it on the salad, but we liked it in the other creations: burritos, quesadillas, or Mexican pizza.
Unfortunately, most Bajio restaurants are no longer around and I don’t actually have their green chile chicken recipe. After some searching, I found this recipe which is pretty similar to the Bajio one, and it’s definitely a keeper. I’ve been making it for years now.
The main thing I love about this yummy, sweet Mexican chicken is that I can easily make it in my slow cooker! (Aren’t Crockpot recipes the best?) It’s super convenient and almost hassle-free for me to make.
Green Chili Chicken Ingredients
Do you want to know another reason why this crockpot green chili chicken recipe is AWESOME? There are only 6 ingredients needed to make it! Just when you thought it couldn’t get any easier, it has.
Another bonus is that you’ll probably have most of the ingredients on hand already. You just might have to go and pick up a bottle of Sprite and some green chilies as those are the 2 uncommon ingredients in this recipe.
Note: If you want to use red meat in this recipe instead of chicken, switch out the Sprite for Coke. That wonderful suggestion came from our reader, Tammy (Thank you!).
Serving Tips
This chicken is really good served on a SALAD or in a tortilla (burrito, enchilada, quesadilla). Add beans, cheese, caramelized onions, tortilla strips, rice, whatever your heart desires.
I can’t remember where I originally found this recipe, but I did a search and it looks like it was shared on Your Homebased Mom a while ago.

Green Chili Chicken Slow Cooker Recipe
Ingredients
- 4 pounds boneless skinless chicken breast
- ½ cup salsa
- ½ cup brown sugar
- 1 tablespoon cumin
- 4 oz can of green chilies
- 6 oz of Sprite
Instructions
- Combine all ingredients, except chicken, in a medium bowl.
- Place the chicken in the slow cooker.
- Pour the salsa mixture on top and cook on low for about 5 hours.
- Remove the chicken and shred or cut it into bite-sized pieces.
- Then return it to the slow cooker and cook for 1 more hour.
- To thicken the sauce, remove the chicken, dissolve 4 teaspoons of cornstarch in 6 tablespoons water, then stir it into the sauce in the slow cooker.
- Cover and cook on high for about 10 minutes, until thickened.
- Add the chicken back to the slow cooker with the sauce and toss to coat.
- Serve on a salad, in a tortilla, or taco with fixings.
We use this recipe all the time. I also use it with wild meat such as elk and deer. When using red meat, I switch out the sprite for a coke. Its fabulous!!

Can I use precooked rotisserie chicken breast ?
I suppose you could! You would just use the slow cooker to slowly warm it all up together, so reduce the cooking time! 🙂
Does it matter if the chicken is frozen? I was going to use fresh, but the hubs brought home the frozen bagged kind 😉
I would just let it thaw first (in the refrigerator or in a bowl of cold water). 🙂
