Bacon Pineapple Shrimp Appetizer

With the holidays in full swing, it is a great time to plan what you are going to be serving your guests or bringing to the next get-together. And I love this amazingly sweet and tangy bacon pineapple shrimp appetizer.

  • Jumbo shrimp, peeled and deveined

Will the Toothpicks Burn in the Air Fryer?

While you should not have an issue with the toothpicks burning in the air fryer (I never have!), you can always be on the safe side and soak the toothpicks in a little bit of water ahead of time and you will be more than in the clear!

 

How Do You Devein Shrimp? 

One of the things you will want to make sure you do is devein the shrimp before making this recipe. If you have never deveined shrimp before, the Food Network has a great step-by-step tutorial on how to devein shrimp

If you want to skip having to devein the shrimp, you can buy the shrimp deveined fresh and frozen. Just make sure you know before you start cooking. 

 

 

Do You Need to Use BBQ Sauce? 

Not everyone loves BBQ sauce, so if you need to you can omit the BBQ sauce. However, I will say it does add great flavor to this dish as well as helps the juice into the dish to prevent the appetizer from drying out. 

If you would prefer, you can also try using another type of sauce with this shrimp appetizer. You could give these a try:

  • Sweet chili
  • Sweet and sour 
  • Polynesian sauce
  • Teriyaki sauce

 

How to Make Bacon Pineapple Shrimp Appetizer:

Step 1: Prepare the Shrimp and Pineapple

When you are ready to start, begin by prepping the shrimp. The shrimp will need to be peeled and deveined. 

Then you will need to peel, core, and cut the pineapple into about ½-inch thick chunks, or bite-size. 

 

Step 2: Assemble the Shimp Appetizer

Then, once everything has been cut, place a piece of pineapple on top of a piece of shrimp and wrap half a slice of bacon around it. 

Everything will be held together by piercing a toothpick through the thick center of the appetizer. 

Repeat this until you are out of shrimp, bacon, or pineapple. 

 

Step 3: Finish Preparing the Appetizer

When the shrimp appetizer has been wrapped with bacon and stuck with a toothpick, place it in the bottom of the air fryer basket. 

Then use a pastry brush to generously coat each side of the bacon-wrapped shrimp with BBQ sauce.

 

Step 4: Cook the Bacon Pineapple Shrimp

After you have filled your air fryer basket with the shrimp, place the basket in the air fryer and turn it on at 400F or 200C for 10 minutes or until the shrimp reads 120F or 49C and the bacon and pineapple are cooked to your liking. 

Also, be sure to flip the bacon bundles halfway through the cooking process to make sure it all gets evenly cooked.

I am always game for a good appetizer, and this one is amazing! From the wonderful taste of the shrimp to the sweet pineapple, and the wonderful bacon flavor, you simply cannot go wrong with this recipe. 

Plus with the BBQ sauce loaded on afterward, it seals in all of the great flavors and adds a nice tangy! Also, the fact that this can be made in less than 30 minutes is always a plus!

Bacon Pineapple Shrimp Appetizer

Ingredients

  • 4 cups Fresh pineapple Half a fresh pineapple
  • 16 pieces Jumbo shrimp peeled and deveined
  • 8 slices Bacon cut in half, crosswise
  • ½ cup Barbecue sauce

Instructions

  • Peel, core, and cut the pineapple into 1/2-inch-thick chunks.
  • Place a chunk of pineapple on top of a shrimp, then wrap the whole thing in a 1/2 slice of bacon.  Secure the pineapple, shrimp and bacon with a toothpick.
  • Repeat with the remaining shrimp.
  • Place the wrapped shrimp in the air fryer basket. Brush generously with barbecue sauce on both sides.
  • Air fry at 400 °F for 10 minutes, flipping at the halfway point, or until the shrimp registers at 120 °F with an instant read thermometer and the bacon and pineapple are cooked to your liking.
