Lemon Berry Baked Oatmeal in the Air Fryer

I am so excited to share today’s air fryer recipe! On YouTube, I asked my viewer’s to send me their favorite air fryer recipes. Then, in this YouTube video, I tested them out. I had so much fun trying the recipes YOU sent to me. Today’s air fryer recipe comes from one of my viewers, Mike from Australia. How to Make Air Fryer Lemon Berry Baked Oatmeal

I love trying breakfast recipes in the air fryer because its a fun way to mix up the mornings or to treat the kids to something special on a Saturday or Sunday morning. This baked oatmeal in the air fryer was no exception. This recipe is perfect for one or two, and can be whipped up in less than thirty minutes!

For a delicious lemon berry baked oatmeal, you will need:

  • ½ cup of rolled oats.
  • 1 tablespoon brown sugar or Rice Malt Syrup or Maple Syrup 
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of ground cinnamon
  • Zest of a lemon
  • ½ cup of milk of choice
  • 1 egg
  • Juice from zested lemon, about ½ of the lemon 
  • 1 cup of berries of choice, ½ diced, ½ sliced
  • ⅛ cup of slivered almonds.
  • ⅛ teaspoon nutmeg

Important Note about the Lemon Zest and Lemon Juice

Feel free to add more a less lemon to your personal taste and preference. When I made this for the first time, my daughter and I loved the lemony taste; it was so refreshing and light. However, one of my sons thought it was too lemony. So, feel free to adapt this recipe and use more or less lemon than called for.

Additionally, if you don’t have fresh lemons on hand, I did try making this recipe with bottled lemon juice. Just add several splashes of lemon juice or more to the wet mixture, and don’t worry about adding the lemon zest.

Air Fryer Lemon Berry Baked Oatmeal

This recipe is so easy to make! First, combine the dry ingredients in one bowl. Then, add the wet ingredients to another. Combine both the wet and dry ingredients and let it sit for 10 minutes. While the oatmeal rests, prepare the berries.

What Berries Should I Use in Berry Baked Oatmeal?

You can use any berries you want here! You will need a total of 1 cup of berries. Y I used strawberries, blackberries, and blueberries. You will dice half of the berries and slice the other half. Of course, if this is too much work for you, just slice all the berries. The diced berries make easier to eat at the end, but you can do it however you want!

How to Make Baked Oatmeal in the Air Fryer

When your berries and oatmeal are ready, lightly spray a cake barrel or other air fryer safe dish. I used the cake barrel included in the air fryer accessory kit. Place the diced berries on the bottom, then the oatmeal. Top it with the sliced berries, almonds, and nutmeg.

The almonds are optional. When I originally made this recipe, I didn’t use almonds because we have a peanut allergy.

Furthermore, if you don’t have nutmeg, you can omit it or substitute it with mace, allspice, cinnamon, or apple pie spice.

Place the cake barrel in the air fryer basket and cook for 12 minutes at 300°F/150°C. Check on it after 10 minutes, and adjust the time if needed.

Serving Suggestion

Remove from the air fryer basket and let it cool slightly. You can enjoy this lemon berry baked oatmeal with Greek yogurt, or a different yogurt of your choice. You will also love this recipe as is.

  • In a bowl, mix together the rolled oats, baking powder, cinnamon, salt, brown sugar, and zest from 1 lemon (you can use less zest if you don't want it to be as lemony).
  • In a separate bowl, mix together the milk, egg, and lemon juice from 1/2 of the zested lemon (you can add more or less lemon juice to your preference).
  • Combine and mix together the wet and dry ingredients and let it rest for 10 minutes.
  • While the oatmeal rests, prepare the berries. You can use any berries you want here, I did blueberries, strawberries, and blackberries. You want 1/2 cup of diced berries and 1/2 cup of sliced berries.
  • When the mixture is ready, spray an air fryer safe pan with non-stick spray oil.
  • Place the diced berries on the bottom, then pour the combined oatmeal mixture in.
  • Add the sliced berries on top. Then, sprinkle on almonds and nutmeg.
  • Cook in the air fryer at 300°F/150°C for 12 minutes. Check on the oatmeal after 10 minutes, if its done then remove from the air fryer basket.
  • Optional serving suggestion: enjoy with Greek yogurt on top!
