We love making fruit rolls at our house. My family just gobbles them up. Fruit rolls are a great way to use your fruit that has been sitting on the counter for too long too.

You will need:

Strawberries
Lime Juice {optional}
Sweetener: I use Xylitol, but you can use sugar or honey
Pam Spray or coconut oil
Blender
Fruit Roll Sheets
Food Dehydrator

Lightly coat your tray with Pam or cooking spray to keep the fruit from sticking to the sheet.

Blend Strawberries with lime juice and sweetener. SIDE NOTE: I like Xylitol for its anticariogenic effect on the teeth because it breaks down the mutans streptococci in the mouth. In other words, it can help prevent tooth decay. 🙂  Here is a study done on Xylitol chewing gum published in the Journal of the  American Dental Association. Just in case you are interested.  I get my Xylitol from Amazon or Vitacost. As a dental hygienist I like to sneak in the healthier sugars for my family when I can. 

Cathy’s super blender is a Blendtec. I stole her pretty picture from her jam recipe post because I think it is so beautiful. I mixed mine up in my Vitamix. Strawberries are soft enough they should blend in a regular blender or food processor. Once you try one of these super blenders you will never want to go back.

Once fruit is pureed pour it evenly onto your fruit tray.

Spread the fruit evenly with your favorite spatula.

Set your dehydrator to 135° and dehydrate for 4-8 hours or until it is leathery and pliable.

Remove from the sheets, and roll in parchment paper, or plastic wrap. I have found the silicone baking sheets work great for this as well.

Enjoy! You can make these with a variety of fruits. I made some with my pineapple and they were yummy, but really did not need the sweetener. I have also done a strawberry and peach roll. Very good too. The key is to bled the fruit well and let the dehydrator do the rest!

    • I’ve found that my fruit leather lasts about 1-2 weeks in an air tight container. (of course, I eat mine so quickly its hard to gauge an accurate time haha)

      On another note: PAM! Why haven’t I thought of using Pam before?! This is awesome! I’m about to go try it out..

      • I am glad you like the Pam idea. I have found that coconut oil works great too. I have been able to keep fruit leather for months if the kids and hubs do not know where it is. 😉

    • Storage
      There are a few ways of storing the processed fruit leather.
      1. Pull leather off the tray. Cut into strips. Store in an airtight container for up to two weeks.
      2. Pull leather off the tray. Cut into strips. Store in an airtight container in the refrigerator for several months.
      3. Pull leather off the tray. Cut into strips. Store in an airtight container in the freezer for up to a year.

  • Just another reason why I need to get on it and buy a dehydrator!

  • Just wanted to let everyone know that while xylitol does have some beneficial use in humans, it can KILL dogs by causing profoundly low blood sugar. Please make sure your kids don’t feed these roll-ups (or any other xylitol containing foods) to your pets.

  • I have hypoglycemia, so I have looked high and low for a sweetener that won’t bother me and be halfway natural. Xylitol did not do well with me, but Splenda works very well for me.

    • If you can find something other than Splenda, do it. Splenda is made of real sugar so it seems natural but your body doesn’t absorb the sugar because it has been connected to what is essentially chlorine. Using Splenda means that you are introducing Chlorine to your digestive system where it promptly starts killing the good bacteria in your gut. This can cause excruciating stomach pains and in some cases becomes so severe that people end up in the hospital. From people I have spoken with, doctors gave them diagnosis from Irritable Bowel Syndrome, to a diseased Gallbladder. If you can try not to use Splenda or at least as little as possible I would strongly recommend it. If you still want a sweetner, try Stevia. It is very sweet but it does have a unique flavour, however I have found it easy to get used to. Stevia also has the advantage of being a well respected remedy for helping to maintain level blood sugars. I am going to try Stevia in my fruit leather, and I will tell you how it turns out.

  • Three freaking words…SO MUCH WASTE!!!!! Over half of the strawberries fell through the holes on my dehydrator trays. My mixture was thick but it just seeped through. I’m glad I had my tray over the sink. At least the sticky mess was contained. If, and that’s a big one, I do these again I will probably put the wax paper down on my trays first. We live on a tight budget and to literally see my money go down the drain kinda makes me angry.

  • My dehydrator came with a small tray for making fruit leathers but if i want to make a big batch, what is a good liner for the regular trays?

  • I’m finding that the edges are fine and the centre is sticky and not dried. Even when I used the oven method. I don’t know what I’m doing wrong!!!!!! Ahhhhh.
    I loved this as a child and want to perfect it like I remember my friends mom doing it. Help please

  • Try using blueberries. Those are my favorite.
