Key Lime Cake Recipe

This is a fun, green cake. It is pretty sweet and lime-y too. I think it would go well with some plain vanilla ice cream or maybe try it with some fresh strawberries.

Remove the first cake from its pan, discard the wax paper, and spread a layer of icing on top of the cake. Remove and stack the second cake (without wax paper) on top of the first and spread a layer of icing on it. Stack the third cake and spread a layer of icing on the top. Use the remaining icing to cover the sides of the cake. Store the cake in the refrigerator to keep the icing firm.

Key Lime Cake Recipe
Ingredients
- 1 box lemon cake mix
- 1 box lime Jell-O 3 oz
Cake
- ⅓ cup vegetable oil
- 3 eggs
- ½ cup orange juice Minute Maid Orange Juice Coupon
- ¾ cup water
Glaze
- 4 Tbsp confectioners sugar
- ¼ cup lime juice bottled
- ¼ cup lime juice fresh, about 2 limes
Icing
- 1.5-2 cups confectioners sugar
- 8 oz cream cheese softened
- 1 stick margarine or butter softened
- 1 tsp vanilla
Instructions
Cake
- Prepare 3 round 9" pans by lining the bottoms with 9" circles of wax paper.
- Spray the wax paper with Pam and then sprinkle with flour.
- Mix the cake mix, lime jello, oil, eggs, orange juice, and water together for 2-3 minutes at medium speed.
- Pour an equal amount of the batter into each of the 3 prepared pans.
- Bake at 350 for 25 minutes.
Glaze
- While the cakes are baking, knead two limes against a hard surface to loosen the juice inside of them. Cut each lime in half.
- Squeeze 1/4 c fresh lime juice into a small bowl.
- Pour 1/4 c bottled lime juice into the bowl with the fresh juice.
- Mix in 4 Tbsp of confectioners sugar. When the cakes come out of the oven, and while they are still warm, use a spoon to drizzle the glaze mixture onto the entire surface of each cake.
Icing
- Mix the margarine and cream cheese together. Gradually mix in confectioners sugar.
- Add the vanilla and mix until smooth.
- If you want green icing, just add a few drops of green food coloring.
That cake look kind of gross, but I love key lime anything, so it probably taste amazing. Thanks for the recipe!

This Florida girl says that’s no “key” lime cake–just lime cake. Looks tasty but there’s not a key lime to be found there. It’s hard to move outside of Florida where key lime pies are bright green and taste like lime Jello. If you’ve never had a real key lime pie, you’re missing out!
You’re right, I only used regular limes and not key limes. It isn’t easy to find key limes around here. It is still a fun cake though. 😉

I used the cream cheese frosting recipe above and did not use food coloring in it. 🙂
