I love pasta salads. They are the perfect mix of ingredients and have a hearty but light feel all at the same time! If you’ve never had a pasta salad with green beans before, you’ve got to try this recipe!

The Gemelli pasta called for in this green bean pasta salad recipe is absolutely perfect for it. Gemelli pasta is a single strand of pasta twisted into a spiral which helps it retain the dressing once it is tossed.

Note: If you can’t find Gemelli at your local grocery store, Rotini pasta will get the job done well too.

I am a huge fan of the crispness in this pasta salad recipe from the fresh green beans, diced bell pepper, and radishes. The toasted pine nuts also really give it an added flavor dimension that is truly a nice surprise.

Preparing Your Italian Green Bean Pasta Salad

Pasta salad is best when prepared ahead of time as the flavor gets better when it has the opportunity to be refrigerated and the flavors meld together.

All you need to do is cook your pasta to al dente and then rinse with cold water to stop the pasta from continuing to cook. Then blanch your green beans to keep them nice and crisp while retaining their beautiful green color.

Now you are ready to mix together the mayonnaise and Italian dressing for the perfect coating. Once your dressing is mixed, add the cooked pasta, red bell pepper, Asiago or Parmesan cheese, radishes, and green onions to the bowl and toss to coat everything thoroughly.

Serving Tips

Once you get your pasta salad coated to your liking, then make sure to cover properly and refrigerate for at least a few hours, but it is even better if you give it a chance to sit overnight. Once you are ready to serve just toss with pine nuts and enjoy!

Italian Green Bean Pasta Salad Recipe

Yield: 7 cups | Serves: 7

Ingredients

  • 8 ounces gemelli or rotini pasta
  • 1/2 pound fresh green beans, cut in half
  • 1/2 cup light mayonnaise
  • 1/4 cup Italian dressing
  • 1/2 red bell pepper, diced
  • 2/3 cup shredded Asiago or Parmesan cheese
  • 1/2 cup julienned radishes
  • 1/4 cup sliced green onions
  • 1/4 cup pine nuts, toasted

Instructions

  1. Prepare pasta according to package directions; rinse with cold water and drain. Set aside.
  2. Blanch green beans; cool.
  3. In large bowl, combine mayonnaise and salad dressing. Add pasta, green beans, peppers, cheese, radishes and onions; toss to coat. Salt and pepper to taste.
  4. Refrigerate, covered, several hours or overnight. Toss with pine nuts just before serving.
