I love pasta salads.  They are the perfect mix of ingredients and have a hearty but light feel all at the same time!  The Gemelli pasta used in this recipe is absolutely perfect for this salad.  Gemelli pasta is an single strand of pasta twisted into a spiral which helps it retain the dressing once it is tossed.  I also am a huge fan of the crispness in this pasta salad recipe from the fresh green beans, diced bell pepper, and julienned radishes.  The toasted pine nuts also really give it an added flavor dimension that is a truly a nice surprise.  This is definitely best when prepared ahead of time as the flavor just gets better when it has the opportunity to be refrigerated and let the flavors meld together.

This is the perfect pasta salad for your next party, family gathering, baby or bridal shower, picnic, or as a side for your favorite BBQ sandwiches at dinner.  This recipe takes you only a few minutes to make and you will not be disappointed.  All you need to do is cook your pasta to al dente and then rinse with cold water to stop the pasta from continuing to cook.  Then blanch your green beans to keep them nice and crisp while retaining their beautiful green color.  Now you are ready to mix together the mayonnaise and Italian dressing for the perfect coating.  Once your dressing is mixed add the pasta, red bell pepper, Asiago or Parmesan cheese, radishes, and green onions to the bowl and toss to coat everything thoroughly.  Once you get your pasta salad coated to your liking then make sure to cover properly and refrigerate for at least a few hours, but it is even better if you give it a chance to sit overnight.  Once you are ready to serve just toss with pine nuts and enjoy!

Italian Green Bean Pasta Salad Recipe

Yield: 1/2 lb | Serves: 4


  • ½ (16 ounce) package Gemelli Pasta
  • ½ pound fresh green beans, cut in half
  • ½ cup Light Mayonnaise
  • ¼ cup Italian Dressing
  • ½ red bell pepper, diced
  • ⅔ cup shredded Asiago or Parmesan cheese
  • ½ cup julienned radishes
  • ¼ cup sliced green onions
  • ¼ cup Pine Nuts, toasted


  1. Prepare pasta according to package directions; rinse with cold water and drain.
  2. Set aside.
  3. Blanch green beans; cool.
  4. In large bowl, combine mayonnaise and salad dressing.
  5. Add pasta, green beans, peppers, cheese, radishes and onions; toss to coat.
  6. Salt and pepper to taste.
  7. Refrigerate, covered, several hours or overnight.
  8. Toss with pine nuts just before serving.

    You can also find EE cheese. Use the store coupon for $1/1 any EE item (if you can find any) or the ID cheese coupon and this would be quite thrifty.

    I make a pasta salad that is very similar except I use just Italian dressing and no mayonnaise. I like to add julienned carrots too. Add some diced chicken and it’s a main dish that my family gobbles.
