Grilled corn with Chipotle Butter

You’ll love this flavorful kick on your grilled corn… this yummy chile lime butter adds a nice southwestern flair! Plus grilling corn is so easy and sooo yummy!

Just whip up the butter mixture (see directions below) and then pull back the husks on the corn. Don’t remove them! You’ll want them on when you’re grilling. Why do you want to grill your corn on the cob IN the husks? The husks protect the corn from getting dried out! The husks keep the steam inside! You don’t even have to mess with the silks! (YAY!)

I pull the husks back, give the corn a quick rinse in hot water, then pat them dry with a paper towel.  Next, slather your corn with the butter mixture, put the corn husks back on the corn for grilling.

For the most intense flavor, let these marinade in your fridge for up to 4 hours! Then grill with the husks on until cooked to your liking! I usually grill them for 15-20 minutes over medium heat with the lid closed. Be sure to rotate your corn every 5 minutes-ish so they don’t burn!

  • 1/2 c (1 stick) Butter
  • 2 tsp Chipotle or Chile
  • 2 tsp lime juice
  • 1/4 tsp salt
  • 8 ears of corn


  1. Prepare corn for grilling by pulling husks back, rinsing corn and patting dry.
  2. Melt butter in small saucepan over medium heat. Add minced chipotles, fresh lime juice, and 1/4 teaspoon salt. Reduce heat to low and cook chipotle (or chile) butter 1 minute to blend flavors.
  3. Place ears of corn on baking sheet. Brush corn all over with chipotle butter. Cover corn and refrigerate
  4. Let marinade up to four hours
  5. Grill corn over medium-high heat for about 15-20 minutes, rotating every 5 minutes or until husks are completely blackened and charred on all sides.
  6. Let corn sit for 5 minutes or until cool enough to handle
