Easy Caramel Recipe
Making homemade caramel can be really easy!
I love to make caramel. I love to eat caramel even more. It is my Christmas tradition to make homemade caramel. I used to dread it because it meant I would have to spend what seemed like forever at the stove stirring the caramel to keep it from burning. It was tricky to get it to the right consistency too. Not too soft, not too hard, but that perfect ball stage. I finally found success when I got a candy thermometer and a good stainless steel pan with an aluminum disk core induction base for fast, even heating. But I gave up the time commitment and the need for fancy tools instantly when I discovered this fabulous microwave caramel recipe.
There are so many different things you can do with Caramel!
Caramel Candy:
As soon as your caramel is done cooking, pour it on a silicon baking mat until it cools. The caramel peels right off of the silicone mat. No need for oils, butter or even wax paper! Get a little fancy and drizzle on some melted chocolate or almond bark!

or dip Pretzel Rods in your Caramel for a sweet and salty treat!
Easy Caramel Recipe
Ingredients
- ¼ cup butter
- ½ cup white sugar
- ½ cup brown sugar
- ½ cup light corn syrup
- ½ cup sweetened condensed milk
Instructions
- Combine all ingredients in microwave safe bowl.
- Microwave for 1-2 minutes, then stir and return to microwave for additional 1 minute.
- Continue to do this (usually 2-3 more times) until carmel forms a soft ball, and is a chewy consistency.
- Careful not to cook too long—it’s better too soft than too hard!
I made the caramel. It is still on the shh0eet but very stick. Not sure how to arrange for serving. It is very tasty though.
