Even though pizza isn’t my favorite, give me a good stromboli or calzone and I will not share it—seriously! Stromboli is the perfect thing to prepare when you’re serving more than one person. Make a few kinds, slice them up, and serve with a variety of dipping sauces for a fun dinner or appetizer for a party. Everyone gets a taste of something different, and no one goes hungry!

Today we are making air fryer pepperoni stromboli. Get ready for melty cheese, flavorful pepperoni, and a shatter-crisp crust — all with a 2-ingredient dough you can mix in minutes. What’s the difference between a calzone and a stromboli?

The biggest difference is the shape and serving style. Calzones are folded half-moons, typically single-serve and made for dipping. Stromboli is rolled into a long log that you slice into portions, often with sauce inside. Both are pizza-adjacent, customizable, and baked until the crust is golden and the cheese is gooey. How to Make Pepperoni Stromboli in the Air Fryer

Step 1: Make the 2-ingredient dough

Combine self-rising flour and nonfat Greek yogurt until a thick, shaggy dough forms. (You can also use any pizza dough, including store-bought. Our favorite homemade pizza dough works great.)

Step 2: Fill the dough

Roll the dough into two long rectangles (¼-inch thick) to fit your air fryer basket. Spread pizza sauce, sprinkle seasonings and mozzarella, then layer on pepperoni (or your favorite toppings).

Step 3: Roll and seal

Starting along a long edge, roll tightly (like cinnamon rolls). Pinch seams to seal and tuck ends under.

Step 4: Top and vent

Place seam-side down in the basket, leaving space between loaves (go diagonal if needed). Brush with egg wash, cut a few diagonal slits, and sprinkle with a little cheese or parsley.

Step 5: Air fry

Air fry at 340°F (171°C) for ~10 minutes. Peek near the end; times vary by air fryer. The top should be golden and cheese bubbling at the vents. For doneness, an instant-read thermometer inserted in the center should read ~200°F (93°C). If browning too fast, reduce to 320°F (160°C) and cook a few more minutes.

Alternative Oven Instructions to Make Stromboli

If you want one long loaf (or don’t have an air fryer), bake it in the oven:

  1. Preheat oven to 400°F (200°C). Line or spray a baking sheet.
  2. Use one large rectangle of dough instead of two smaller ones.
  3. Add sauce, cheese, and toppings; roll into a log. Pinch seams and tuck ends.
  4. Transfer to the baking sheet seam-side down; brush with egg wash, cut slits, sprinkle cheese.
  5. Bake 22–25 minutes, until deep golden and cooked through (center ~200°F).
  6. Rest 5 minutes before slicing to keep the cheese inside.

Can I make stromboli ahead?

Yes. Assemble, cover, and refrigerate up to 24 hours. Allow to rest at room temp for 30 mins OR add 1–2 extra minutes to air fryer time. For oven, add 3–5 minutes.

How do I reheat leftover stromboli?

Air fryer: 320°F for 3–5 minutes. Oven: 350°F for 8–10 minutes. Avoid microwaving if you want to keep the crust crisp.

What dipping sauce works best with stromboli?

Warm marinara or pizza sauce is classic with air fryer pizza stromboli, but Alfredo, au jus, ranch, or blue cheese dip all pair perfectly depending on your filling!

  • 1 ¾ cups self rising flour
  • 1 cup nonfat plain Greek yogurt
  • 4 tablespoons pizza sauce plus extra for dipping
  • 1 cup shredded mozzarella cheese plus extra for topping
  • 2 ½ ounces pepperoni
  • 1 egg beaten
  • Italian seasoning optional
  • Garlic seasoning optional

Instructions

  • In a large mixing bowl or stand mixer, combine self rising flour and Greek yogurt until a thick dough forms. Dough will be shaggy and thick, but should mostly stick together when pressed into a ball. Roll out dough into a 10"x14" rectangle on a lightly floured surface. Cut the rectangle of dough in half to form two rectangles (to fit in the air fryer).
  • Spread about 2 tablespoons pizza sauce on each rectangle, leaving a 2-inch border around the edges. Sprinkle 1/2 cup cheese over the sauce on each, then top with pepperoni.
  • Roll the rectangles of dough up into logs, like you would with cinnamon rolls. Pinch the edges together and tuck and pinch the ends under. Brush the tops of the stromboli with the beaten egg. Sprinkle with Italian seasoning, garlic, and additional cheese. Use a sharp knife to gently cut diagonal slit, every 2 inches, on top of each stromboli.
  • Preheat air fryer. Spray air fryer basket with oil. Place both stromboli in the air fryer basket, if they will fit without touching each other. Air fry at 340°F for about 10 minutes, until golden brown and cooked through. Let rest for a few minutes, the cut into slices and serve with extra pizza sauce for dipping.

Any pizza dough will work for this recipe.
Oven Instructions: Preheat oven to 400°F. Spray baking sheet with oil spray. Follow instructions above, but keep stromboli as one big roll and place on baking sheet. Bake for 22-25 minutes, until golden brown and cooked through.

  • I’m trying to get more veggies in my diet. If I add onions, peppers, and mushrooms how mush more cooking time should I add? Should I precook the veggies? Thanks!

    • I’m not sure you’d need more cooking time… and precooking your veggies will depend on how crunchy you like them… if it were me, I’d probably give them an 8 minute roast in the air fryer first. 🙂

  • Made this tonight and it came out great! Love how fast and easy the Greek yogurt dough is. To make exactly the amount of self-rising flour for this I whisked together: 1 3/4 c. all-purpose flour, 2 1/2 tsp baking soda, and 1/4 tsp salt.

    Start to finish this recipe only took 20 minutes, perfect for a weeknight dinner.
