Today’s recipe is adapted from one of my favorite cooking websites, Mel’s Kitchen Cafe. And let me tell you, this recipe was amazing before the air fryer (you can easily bake this recipe in your oven), but now, it just got a whole lot better thanks to the air fryer.
Depending on your serving size, the air fryer will cut your cooking time in half! Needless to say, I am so excited to share this balsamic chicken and veggies recipe with you today!

Fresh Air Fryer Chicken and Vegetables with Balsamic Vinegar Marinade
I love this recipe because it is super adaptable. Here are the vegetables I love to use for this recipe, but feel free to experiment with you own favorites!
- 1 1/2 lbs chicken, cut into bite sized pieces
- 2 of each: small zucchini squash & small yellow squash (abt 12 oz each), cut into bite sized pieces
- 1 bell pepper, cut into bite sized pieces
- 1 head of broccoli, chopped into bite sized pieces (about 4 cups chopped)
- 1 small red onion, chopped
- 1-2 cups cherry or grape tomatoes, halved
I’ve made it without the yellow squash before and I have also added sweet potato to the mix. However, sweet potatoes usually take longer to cook, so I would bake the sweet potatoes by itself in the air fryer for about 10-15 minutes, and then add them into the mix.
Flavorful Balsamic Marinade Ingredients
The balsamic marinade is the best part of this recipe. To marinate the chicken and vegetables, you will need:
- 1/3 cup balsamic vinegar
- 3 tablespoons olive or avocado oil
- 1-2 tablespoons honey
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 teaspoon coarse kosher salt
- 1/2 teaspoon pepper
How to Make Balsamic Chicken and Vegetables
This recipe is considerably easy. The most important thing you’ll want to keep in mind is that your veggies and chicken will need to marinade for at least 15 minutes before cooking. Plan ahead for this recipe. You can marinate your chicken and vegetables for up to 2 hours.
How to Cook Chicken and Vegetables Together in the Air Fryer
This recipe is a breeze because you can cook the chicken and vegetables at the same time. It is a simple one pot recipe!
Lay down a single layer of the mixture in the air fryer, this was about half the bowl. Cook at 370°F/185°C for 12 minutes. At the halfway point, mix the batch together with a silicone spoon. Then cook at 400°F/200°C for another 5 minutes or until the chicken registers at 165°F/74°C on your instant read thermometer.
Important Tip
Like all air fryer recipes, cooking time and temperature will change depending on your model. So watch your veggies closely and don’t be afraid to adjust and make changes to your time and temperature!

Veggies
- 2 small zucchini squash about 12 oz each, cut into bite sized pieces
- 2 small yellow squash about 12 oz each, cut into bite sized pieces
- 1 bell pepper cut into bite sized pieces
- 1 head of broccoli chopped into bite sized pieces (about 4 cups chopped)
- 1 small red onion chopped into bite sized pieces
- 1 ½ lbs chicken cut into bite sized pieces
- 1-2 cups cherry or grape tomatoes halved
Marinade
- ⅓ cup balsamic vinegar
- 3 tablespoons olive or avocado oil
- 1-2 tablespoons honey
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- 1 teaspoon coarse kosher salt
- ½ teaspoon pepper
Instructions
- Chop veggies & chicken into bite sized pieces and stir together in a large bowl
- In a separate bowl, blend marinade together
- Stir marinade into veggies & chicken and marinate for 15 min-2 hours.
- Cook half batch for 370°F/187°C for 12 min (stirring once at halfway point)
- Cook for 5 more minutes at 400°F/204°C or until chicken registers 165°F/74°C & veggies are desired tenderness.
Just got an air fryer this week and tried this for dinner tonight. It was so yummy! Will definitely be a regular meal in our house!

I tried to make this recipe last night but I don’t quit understand the “Cook half batch for 370°F/187°C for 12 min (stirring once at halfway point)” instructions.
Are we suppose to cook the recipe in two half batches?

Question are you removing the seeds from the zucchini and yellow squash? Your instructions don’t say on line here or your recipe book. Please clarify.

This was delicious! It made 3 separate batches in my 5.5qt Ninja. 1st batch I followed the recipe exactly and the broccoli burnt, but was still great. I adjusted time down a few minutes on 365 degrees and it was amazing. I will use the marinade recipe frequently cause we loved it!
