Delicious & Easy Chocolate Coconut Cream Pie

I love chocolate and I love coconut! So this pie is packed with things that I love. If you are like me and you like chocolate and coconut too, you are going to LOVE this pie! Another thing I love about this chocolate coconut cream pie is that it is so quick and easy to make.

So easy in fact that I made two pies today; one with a graham cracker crust and one with a pre-made pastry crust. I thought they were both very good, but the majority of my guests slightly preferred the graham cracker crust. Here are two awesome crust recipes you can use with this coconut cream pudding pie:

Both recipes are pretty simple, but using a pre-made crust will save you some time! The only downside to the pre-made crust is that it might not taste as good AS good – it will still taste amazing though. 😉

Toasting Your Coconut

Toasting coconut is pretty simple, you just have to stay close and keep an eye on it because it can burn easily!

The First Layer of Your Chocolate Coconut Cream Pie

The first layer you’re going to add to your pie is the chocolate layer. This layer consists of melted chocolate chips, whip cream, and toasted coconut. It tastes like a candy bar slipped into the bottom of the pie. Yummy!

The Second Layer

For the second layer of your pie, add your coconut cream pudding on top of the chocolate layer. Then, refrigerate your pie for later.

Quick and Easy Chocolate Coconut Cream Pie Recipe

This easy chocolate coconut cream pie is the perfect recipe to whip up in a hurry.

Ingredients

  • ½ Cup Semi-sweet Chocolate Chips
  • 2 Cups Cool Whip Whipped Topping
  • 1 Graham Cracker Crust Or Pastry Pie Crust
  • ¾ Cup Coconut
  • 1 ½ Cups Milk
  • 3 ounce package Coconut Cream Pudding

Instructions

  • Have a graham or pastry crust prepared.
  • Put coconut on baking sheet and place under broiler to toast. Stir with wooden spoon and watch carefully to keep from burning. Take it out when it is generally golden brown.
  • Melt Chocolate until smooth in the microwave 30 seconds at a time. Stirring every 30 seconds.
  • Stir 1/4 cup of toasted coconut and 1 cup of cool whip into the chocolate.
  • Spread chocolate mixture in the bottom of the pie crust.
  • Mix pudding mix and 1 1/2 cups milk together over medium heat on the stove. Bring to a boil and stir constantly.
  • Pour pudding over the chocolate.
  • Refrigerate 4 hours. Top with cool whip and toasted coconut before serving.
