Coconut Crunch Cookies Recipe
This is a new recipe I tried a few weeks ago from the upcoming Taste of Home Best Loved Recipes Book. I had some chocolate chips and butter in my freezer, some slivered almonds and coconut from Vitacost (If you haven’t already, get a free $10 credit to Vitacost.) and all the other baking items as staples in my pantry. I took these cookies to a football party and they got devoured by my friends and family.
1 cup butter, softened
¾ cup sugar
¾ cup packed brown sugar
2 teaspoons vanilla extract
1 teaspoon almond extract
2 cups flour
1 teaspoon baking soda
¾ teaspoon salt
2 cups flaked coconut (I got mine from vitacost)
¾-1 package milk chocolate chips
1 ½ cups finely chopped almonds (I got mine from vitacost)
1. In a large bowl, (I like to use my Bosch) cream butter and sugars until light and fluffy. Beat in eggs and extracts. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in coconut, chocolate chips and almonds.
2. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. (I love to use my silpat). Bake at 375º for 9-11 minutes or until lightly browned. Cool the cookies for 1 minute before removing from pans to wire racks.
For a shortcut on finely chopping my almonds I used my vitamix on a low setting.
Don’t those ingredients look beautiful?
Ready to bake on the Silpat liner. You do not have to use a silpat. I like mine because it evenly bakes the cookies and they seem to just turn out a little bit better.
