Dill Pickles

Pickling Pointers:
1.  Pick the size of cucumbers that you like, some people like tiny ones others slice the large ones to fit in the bottles.
2.  Wash with a soft brush.
3.  Remove stems and blossoms (if any)
4.  Make into pickles immediately for best results.

Pickling Brine:
You will need approximately 2 1/2 cups of brine per quart of pickles.


  • 1 1/3 cup white vinegar, (5% solution)
  • 3 cups water
  • 1/4 cup salt, non-iodized (iodine makes pickles soft.)

1. Fill cleaned and sanitized quart jars with cucumbers.
2.  Add per jar:

  • 1 TBSP dill seed
  • 1/8 tsp minced garlic

3.  Add brine mixture to neck of bottle.
4.  Clean rims and secure lids.  Process immediately for best results, cucumbers that stand in brine without being processed become soft.
5. Steam can or use a boiling water bath for 10 minutes processing time.

    I dehydrate my cucumbers. The have a natural salt in them and after being dried that salt flavor intensifies and makes a pretty decent healthy alternative to potato chips. You can also puree them after they are dehydrated to make a powder to add as a flavoring to soup or other dishes. You can also make pickles with them after you have dehydrated them.

    Quick cucumber cleaning: Run just water thru your washing maching (top load only) for 1 cycle to rinse out. Load one layer cucumbers in bottom – you can put in more, but they’re too heavy for the washer if you put it too many. Put washer on gentle cycle & wash your cucumbers. Let washer drain, but DON’T LET IT GO INTO SPIN CYCLE! Voila, squeeky clean cukes. I’ve canned pickles for years & had no problems with this method.

    We slice up the cucumbers and add italian salad dressing for a fun spicy salad side at dinner or at a picnic potluck. Let sit in the fridge for about 1/2 hour before serving.
