Today is the day to enjoy this French dessert! This is another famous dish created by the great Chef Auguste Escoffier. Follow these recipes and Enjoy this delicious dessert!

Ingredients:

400 ml water
2 tbsp sugar
1 strip of lemon zest
1 tbsp of lemon juice
4 pears (or 1 tin of peeled pear halves)
1 cake
2–4 tbsp Maraschino, Williams or Cognac
150 g plain chocolate
30 g butter
150 ml milk or single cream
2 egg yolks
1 tbsp sugar

Ingredients:

Poached pears, recipe follows
Chocolate ice cream, recipe follows
2 cups heavy cream, whipped
Chocolate sauce, recipe follows
Poached Pears:
1 quart water
1 1/2 cups sugar
1 1/2 lemons, juiced
1 1/2 lemons, juiced
1 1/2 vanilla beans
4 ripe Bosc pears
Chocolate Ice Cream:
4 cups whole milk
7 ounces unsweetened chocolate, chopped
1 1/2 cups sugar
8 egg yolks
Chocolate Sauce:
1 cup whole milk
10 1/2 ounces bittersweet chocolate, chopped
1/2 cup heavy cream
2 tablespoons unsalted butter
1/3 cup sugar

Ingredients:

Pears
4 pears, peeled
100 gms – 3.5 oz. icing/confectioner’s sugar
Juice of ½ lemon
1 vanilla pod, open and scraped
1 lt – 4 cups water

Sauce and Decoration
100 gms – 3.5 oz. dark chocolate
80 ml – ⅓ cup heavy cream
50 gms – ⅓ cup sliced almonds, toasted
Sweetened whipped cream and/or Vanilla Ice cream, to serve
