Green Chili Casserole Freezer Meal Recipe

Warm memories of Mom, yep, that’s what ground beef green chile casserole imparts. It was on her monthly rotation and I always loved it. If you want to vary it, you can swap chicken or pork for beef.

If you want to really get the most out of this recipe, be sure to double or triple it and freeze a few for those extra busy days (find the freezer instructions below). It’s just as easy to layer up three as it is to make one!

You’ll want to start this recipe by browning your ground beef and onion together in a skillet. After that, drain the fat and set it aside.

Next, we’re going to make our sauce. Combine the chiles, soup, milk, olives, garlic, sour cream, salt, and pepper in a large mixing bowl. Mix that up nicely and you’ve got your sauce!

Now we can start assembling our ground beef green chili casserole. Beginning with the sauce, layer your tortillas, meat, and cheese in a 9×13-inch baking dish. After you’re finished, top it with cheese and bake at 350˚ degrees for 1 hour.

Preparing For the Freezer:

Preparing your green chili casserole for the freezer is easy as pie. First, cover your casserole with parchment paper or plastic wrap, and then cover it with foil as well.

You should also label your casserole with “Ground Beef Green Chile Casserole” and the date you made it. Make sure to print the directions (found below) too so you can easily cook it up when you feel like it.

Prepare after Freezing:

If you’re planning to cook up your frozen green chili casserole, make sure to take it out of the freezer the night before you plan to serve it. Let it sit in the fridge until 2 hours before serving.

Recipe Notes

For a spicy casserole add chiles and juice to your sauce. Rinse and drain chiles for a milder taste. Also, use GF creamed soup for a gluten free dish.
